ABOUT Sticky rice crispy cakes RECIPE

It is a super easy recipe.thougj it is a thai delicacy i tried to give it an Indian twist.if u use dry sticky rice flour it might require more water and rest soaked rice flour at least 30minutes.then sieve.

Ingredients Serving: 3

  1. Fresh sticky Rice flour 1.5 cup
  2. Jaggery 1 cup
  3. Shredded coconut 1 cup
  4. Salt 1/2 tsp
  5. Powder milk 2 tba
  6. Water 4 tbs
  7. For filling sugar 1 tbs

Instructions

  1. IN A PAN TRANSFER 1 CUP SHREDDED COCONUT,1 CUP JAGGERY,1/2 TBS SUGAR.
  2. MIX WELL,COOK ON LOW FLAME.
  3. ONCE JAGGERY, COCONUT COMBINED WELL,TURN OFF HEAT.KEEP ASIDE.
  4. IN. BOWL TRANSFER 1.5 CUP FRESH STICKY RICE FLOUR,ADD 4 TBS WATER.
  5. MIX WELL,IT WILL CRUMBLED
  6. SIEVE CRUMBLED RICE FLOUR THROUGH LARGE HOLE STRAINER.
  7. GIVE PRESS WHILE SIEVE FLOUR.
  8. EQUALLY GRANULLED, MOISTURED RICE FLOUR WOULD BE LIKE THIS.
  9. ADD 1/2 TSP SALT,1/2 TBS SUGAR,2 TBS POWDER MIX WELL.
  10. IN A HEATED PAN ADD 2 TBS STICKY RICE FLOUR,SPREAD INSTANTLY.
  11. COOK FOR 3OR 4 MINUTES ON COVERED.
  12. ADD COCONUT-JAGGERY MIX.COOK FOR ANOTHER 1 MINUTES.
  13. FOLD IT AND STICKY RICE CRISPY CAKE IS READY.
  14. MAKE ALL CAKES WITH SAME PROCEDURE.
  15. PRESS AND SEAL EDGES WHEN IT IS HOT.
  16. ENJOY STICKY RICE CRISPY CAKES.
