Ingredients Serving: 10

  1. White rice flour 2 cups
  2. White corn flour 1 cup
  3. Baking powder 2 teaspoons
  4. Baking soda 3/4 teaspoon
  5. Cinnamon powder freshly ground 3/4 teaspoon
  6. Dates soft seedless large 9 roughly chopped
  7. Hot water 1/4 cup
  8. Coffee instant powder 3 teaspoons
  9. Butter unsalted softened at room temperature 1/2 cup
  10. Honey 1/4 cup or as preferred
  11. Whole milk 1/2 cup or as required
  12. Eggs large 2 at room temperature
  13. Raisins Black 1 cup
  14. Walnut 1/2 cup chopped

Instructions

  1. In a sifter , add 2 cups white rice flour .
  2. Add 1 cup white corn flour .
  3. Add 2 teaspoons baking powder .
  4. Add 3/4 teaspoon baking soda .
  5. Add 3/4 teaspoon freshly ground cinnamon powder .
  6. Sift the dry ingredients thoroughly . ff
  7. Sifted dry ingredients ready . Keep it aside . Let’s prepare our wet ingredients .
  8. Soak 9 large soft seedless dates in 1/4 cup hot water . Preferably use chopped dates .
  9. Add 3 teaspoons aromatic instant coffee powder to the dates liquid .
  10. Mix the coffee completely in dates liquid . Let it sit for 15 minutes .
  11. Meantime preheat cooker in medium.In a bowl ,take 1/2 cup soft unsalted butter at room temperature.
  12. Whisk gently . Add in 2 large eggs . Whisk until
  13. frothy . Eggs and butter combine well .
  14. Now pour in the dates coffee liquid along with chopped dates . Whisk all together .
  15. Pour in 1/4 cup or as preferred honey . Whisk gently .
  16. Add in the sifted dry ingredients gradually while mixing other hand .
  17. Mix until smooth velvety batter achieved .
  18. Add 1/2 cup or required milk to adjust batter consistency .
  19. Silky smooth creamy batter preferred. Add 1/4 cup chopped nuts , 1/2 cup black raisins . Mix .
  20. Line a parchment sheet in a loaf tin. Transfer batter to the tin .Level the surface . Top it up with 1/4nut , raisins.
  21. Tap tin down on a hard flat surface twice to ensure air escapes from the batter . Bake for 40 mins
  22. in medium to high . Do a toothpick test . Loaf is baked perfectly . Take the tin out . Cool
  23. completely before slicing to avoid crumbles.
  24. Cut into slices and store it in air tight container .
