  1. For Dabeli masala powder:
  2. Red chillies - 6 to 7, deseeded and broken
  3. Dalchini - 4 inch
  4. Javithri - 3-4
  5. Badi Elaichi - 3
  6. Dhaniya seeds - 2 tbsp
  7. Saunf - 4 tbsp
  8. Star anise - 4
  9. black pepper - 1 tsp
  10. Cloves - 1 tsp
  11. salt - 1 tsp
  12. Saunth/ dry ginger powder - 1 tsp
  13. For Garlic red chilly chutney:
  14. Red chillies - 8 to 9, deseeded and soaked
  15. Garlic - 7, large slices, chopped
  16. Tomato - 1, medium sized (optional)
  17. Roasted Jeera powder - 1 tsp
  18. Salt to taste
  19. For khajur Imly Chutney:
  20. Thick imly water - 1 1/2 cups
  21. Khajur - 1 cup, chopped
  22. Jaggery - 1/2 cup, grated
  23. Red Chilly powder - 1 tbsp
  24. Roasted Jeera powder - 1 tsp
  25. Saunth - 1/2 tsp
  26. Kaala namak - 1/2 tsp
  27. Garam masala - 1/2 tsp
  28. Salt to taste
  29. For aalu stuffing:
  30. Oil - 2 tsp
  31. Jeera - 1/2 tsp
  32. Hing - 1/2 tsp
  33. Dabeli masala - 1 tbsp
  34. Aalu - 2 cups, boiled and mashed
  35. Sugar - 1 tsp
  36. Salt to taste
  37. Khajur imly chutney - 1 tbsp
  38. Fresh dhaniya - 1 tbsp, chopped
  39. For masala peanuts:
  40. Oil - 2 tsp
  41. Dabeli masala - 1 tsp
  42. Peanuts - 1 cup, peeled and broken
  43. Sugar - 1 tsp
  44. Salt to taste
  45. To toast: Butter - 1 tsp for each bun
  46. To Garnish:
  47. Onions - 1/2 cup, finely chopped
  48. Fresh dhaniya - 1/2 cup, finely chopped
  49. Grated nariyal - 1/4 cup
  50. Pomegranate seeds - 1/2 cup
  51. Bhujjia - 2 to 3 tbsp

Instructions

  1. ADD 6 - 7 RED CHILLIES IN HOT KADAI
  2. ADD 4 INCH DALCHINI
  3. ADD 3 - 4 JAVITHRI
  4. ADD 3 BADI ELAICHI
  5. ADD 2 TBSP DHANIA SEEDS
  6. ADD 4 TBSP SAUNF
  7. ADD 4 STAR ANISE
  8. ADD 1 TSP BLACK PEPPER
  9. ADD 1 TSP CLOVES
  10. DRY ROAST TILL NICE AROMA EMITS
  11. TRANSFER TO MIXER JAR, ADD 1 TSP SAUNTH
  12. ADD 1 TSP SALT
  13. GRIND FINELY
  14. STORE IN AIRTIGHT BOTTLE
  15. TAKE 8 - 9 SOAKED RED CHILLIES IN MIXER JAR
  16. ADD FINELY CHOPPED 7 LARGE GARLIC CLOVES
  17. ADD 1 TOMATO ROUGHLY CHOPPED (OPTIONAL)
  18. ADD 1/2 TSP ROASTED JEERA POWDER
  19. ADD SALT TO TASTE
  20. GRIND TO A FINE PASTE
  21. BOIL 1 1/2 CUPS OF THICK IMLY WATER
  22. ADD 1/2 CUP OF GRATED JAGGERY
  23. GRIND 1 CUP CHOPPED DATES TO FINE PASTE
  24. ADD GROUNDED DATES PASTE, MIX WELL
  25. ADD 1 TBSP RED CHILLY POWDER
  26. ADD 1 1/2 TSP ROASTED JEERA POWDER
  27. ADD SALT TO TASTE, LET IT BOIL
  28. Simmer until it thickens, ADD 1/2 TSP SAUNTH
  29. ADD 1/2 TSP KALA NAMAK
  30. ADD 1/2 TSP GARAM MASALA,MIX WELL
  31. ADD 1 TSP DABELI MASALA IN HOT OIL
  32. ADD 1 CUP PEELED, BROKEN GROUND NUTS
  33. SAUTE, ADD 1 TSP SUGAR
  34. ADD SALT TO TASTE
  35. ROAST WELL
  36. HEAT 2 TSP OF OIL, ADD JEERA
  37. ADD 1/2 TSP HING
  38. ADD 2 TSP DABELI MASALA, SAUTE
  39. ADD 2 CUPS OF MASHED BOILED AALU
  40. MIX WELL, ADD 1 TSP SUGAR
  41. ADD SALT TO TASTE
  42. ADD A TBSP OF KHAJUR IMLY CHUTNEY
  43. ADD CHOPPED FRESH DHANIYA, MIX WELL
  44. GARNISH WITH GRATED COCONUT
  45. GARNISH WITH CHOPPED ONIONS
  46. GARNISH WITH CHOPPED FRESH DHANIYA
  47. GARNISH WITH MASALA PEANUTS
  48. GARNISH WITH FRESH ANAR SEEDS
  49. SLICE BUN, APPLY KHAJUR IMLY CHUTNEY ON ONE SIDE
  50. SCOOP 1 TBSP AALU STUFFING WITH GARNISHES, PLACE IT ON BUN
  51. PLACE 1 TSP MASALA PEANUTS
  52. PLACE FEW FRESH ANAR SEEDS
  53. PUT GARLIC RED CHILLY CHUTNEY
  54. PUT CHOPPED ONIONS
  55. POUR 1 TSP KHAJUR IMLY CHUTNEY
  56. COVER WITH ANOTHER SIDE OF BUN
  57. TOAST DABELI IN 1 TSP OF BUTTER
  58. FLIP AND TOAST BOTH THE SIDES
  59. DAB DABELI WITH BHUJJIA ON ALL SIDES
