ABOUT Irish Soda Bread RECIPE

Traditional Irish soda bread has cross marking on top which indicates blessings of Lord and before baking 4 holes are poked in each corner of loaf to release fairies to prevent curse as per legend. This is healthy and delicious bread

Ingredients Serving: 4

  1. 3/4 cup + 2 tbsp whole wheat flour
  2. 3/4 cup+2 tbsp all purpose flour
  3. 1/2 teaspoon salt
  4. 1 egg
  5. 1/2 tbsp oats
  6. 1/2 teaspoon baking soda
  7. 2 tbsp cold butter
  8. 3/4 cup + 2 tbsp buttermilk

Instructions

  1. TAKE 3/4 CUP + 2 TBSP EACH OF WHOLE WHEAT & ALL PURPOSE FLOURS, 1/2 TSP EACH OF BAKING SODA & SALT
  2. ADD 2 TBSP COLD BUTTER, MIX UNTIL CRUMBLY
  3. WHISK 1 EGG & 3/4 CUP BUTTERMILK
  4. RESERVE 2 TBSP OF THE BUTTERMILK-EGG MIX FOR LATER USE, SET ASIDE
  5. ADD THE REST OF THE BUTTERMILK-EGG MIX TO THE FLOUR MIX, GENTLY MAKE A DOUGH, DON'T KNEAD IT
  6. PLACE THE READY DOUGH ON A FLOUR-DUSTED SURFACE, PAT INTO A 4 CM THICK ROUND
  7. PLACE THE READY DOUGH ON A GREASED & LINED BAKING TRAY, SLASH TO MAKE A DEEP CROSS ON TOP LIKE THIS
  8. POKE HOLE IN THE 4 CORNERS OF THE DOUGH
  9. GLAZE WITH THE RESERVED BUTTERMILK-EGG MIX
  10. SPRINKLE A HANDFUL OF OATS ON TOP, BAKE IN A PREHEATED OVEN AT 190 DEGREES FOR 15 MINS
  11. BAKE FOR 15 MINUTES AT 200 DEG. NOW BAKE FOR 20-30 MINS AT A REDUCED TEMPERATURE OF 160 DEGREES UNTIL DONE
  12. ALLOW TO COOL A LITTLE, SLICE & SERVE
