1 cup whole wheat flour, extra for dusting
2 tbsp chick pea flour
3/4 cup cheese
1 tsp chilli flakes
1/2 tsp dried oregano
1/2 tsp dried basil
1/2 tsp black pepper
1/2 tsp mixed herb
2 tbsp olive oil
3/4 tsp salt or according to taste
1 and 1/2 tbsp butter
8 to 10 fresh basil leaves
Instructions
TAKE 3/4 CUP CHEESE IN A GRINDING JAR
ADD 1 TSP CHILLI FLAKES
1/2 TSP DRIED OREGANO
1/2 TSP DRIED BASIL
1/2 TSP BLACK PEPPER POWDER
1/2 TSP DRIED MIXED HERB
BLEND THIS
TILL ALL HERBS NICELY MIX
TAKE 1 CUP WHOLE-WHEAT FLOUR IN A MIXING BOWL
ADD 2 TBSP CHICK PEA FLOUR
ADD BLEND CHEESE AND MIXED HERB MIXTURE
ADD 2 TBSP OLIVE OIL
ADD SOME WATER AND MIX ALL NICELY
NOW ADD SALT ACCORDING TO TASTE, ADD WATER AND KNEAD A CHAPATI LIKE DOUGH
REST THE DOUGH FOR 15 TO 20 MINUTES
AFTER 20 MINUTES AGAIN KNEAD THE DOUGH
AND MAKE SMALL SAME SIZE BALLS OF THE DOUGH
TAKE A BALL AND COAT WITH DRY WHEAT FLOUR AND ROLL THIS
IF NEED, SPRINKLE DRY FLOUR AND ROLL THIS AS THIN AS POSSIBLE
FOR PERFECT AND SAME SIZE TRIM THE EXTRA PART
NOW TRANSFER IN LOW TO MEDIUM HOT TAWA , WHEN ONE SIDE DONE FLIP THIS
WHEN BOTH SIDE HALF DONE, PRESS THIS TO COOK AND CRISP FROM ALL SIDES
WHEN DONE LEFT IT OUT
MAKE ALL CHAPATI LIKE THIS
COOK AND AND CRISP ALL
NOW MAKE ALL KHAKHRA LIKE THIS
MELT 1 AND 1/2 TBSP BUTTER IN A PAN, AND ADD FRESH BASIL LEAVES TO CRISP
WHEN COOL, CRUSHED THE LEAVES AND ADD SOME SALT AND MIX
NOW TRANSFER THIS BASIL BUTTER AND CRISP KHAKHRA IN A PLASTIC BAG AND SHAKE IT TO COAT EVENLY
