Ingredients Serving: 10

  1. For the Dough :
  2. Whole Wheat flour 1 cup
  3. Foxtail millet flour 1 cup
  4. Pink salt 1 teaspoon
  5. Instant yeast 2 teaspoons
  6. Lukewarm milk 4 tablespoons
  7. sugar 1 teaspoon
  8. Large eggs 2
  9. Vanilla essence 1 teaspoon
  10. Softened butter unsalted 4 tablespoons + 1.5 tablespoons + 1.5 tablespoons divided
  11. For the Filling :
  12. honey 3 tablespoons or as preferred
  13. cinnamon powder 1.5 tablespoon or as preferred
  14. pistachio chopped 2 to 3 tablespoons
  15. Other Ingredients :
  16. butter unsalted softened 1 tablespoon for brushing
  17. For honey butter paste :
  18. butter unsalted softened 2 tablespoons
  19. honey 2 tablespoons

Instructions

  1. In a bowl , take 4 tablespoons lukewarm milk . Add 2 teaspoons instant yeast to it .
  2. Add 1 teaspoon sugar . Mix and keep aside until solution blooms and turns frothy .
  3. Whisk 2 large eggs in a bowl . Keep aside .
  4. Take 1 cup whole wheat flour in a wide bowl . Add 1 cup foxtail millet flour to the bowl .
  5. Break the lumps with finger tips until flour looks smooth .
  6. Add 1 teaspoon pink salt .
  7. Mix the ingredients and make a well in the centre .
  8. Add the frothy yeast mixture to the centre .
  9. Give a quick mix . Then add the whisked eggs .
  10. Add a teaspoon vanilla essence .
  11. Knead the dough . Add 4 tablespoons softened unsalted butter.
  12. Knead to a smooth dough . Initially dough will be sticky . Knead until smooth for 10 to 12 minutes.
  13. Cover and rest the smooth dough for 40 minutes .
  14. After 40 minutes , dough has risen to some extent .
  15. Punch , knock the air out from the dough . Knead for 5 minutes .
  16. Grease 1.5 tablespoon softened unsalted butter throughout the dough .
  17. Cover and rest the greased dough for 1.5 hours .
  18. After 1.5 hours , dough has double in size .
  19. Punch and knead dough for 3 minutes . Transfer the dough to a flour sprinkled work counter.
  20. Spread the dough to a medium thickness rectangle using fingers as shown . Be gentle.
  21. Spread 1.5 tablespoons softened butter throughout the dough .
  22. Use a rolling pin to level the surface of the rectangular sheet .
  23. Drizzle 3 tablespoons honey on the sheet .
  24. Spread . Apply honey throughout the sheet .
  25. Sprinkle 1.5 tablespoon or as preferred cinnamon powder throughout the sheet .
  26. Add chopped pistachios on top .
  27. This is how it looks . Adjust honey and nuts as per taste .
  28. Start rolling the sheet from down to up gently to form a log . Seal the ends .
  29. Log is done .
  30. Leave out the head . Hold head . Start cutting the dough in the middle as shown . One head two
  31. Tail like structure . Could see the layers .
  32. Start braiding gently in opposites . Braid with small equal segment till end . Level up .
  33. Take a loaf tin lined with a parchment sheet.Transfer the braided dough to the tin. Brush with
  34. softened butter. Make slight incisions on every segment .Cover and rest the dough for 1 hour .
  35. After an hour , final proofing is done . See the dough has risen even better.
  36. Prepare a smooth paste with 2 tablespoons butter +2 tablespoons honey . Brush this paste throughout
  37. the dough . Bake in high ,in a preheated cooker for 30 minutes or until Brioche looks deep brown .
  38. Preheating time 20 minutes medium to high. Our Brioche is baked gorgeously. Brush immediately with
