ABOUT Victoria Sponge Cake RECIPE

Named after Queen Victoria, this delicious sponge cake originally made in early 18th century is sponge cake served with cream and jam with steaming cup of tea in afternoons. Its soft, spongy and mouthwatering. Enjoy every bite of this cake

Ingredients Serving: 6

  1. 11/4 cup + 2 tbsp all purpose flour
  2. 2 tbsp corn flour
  3. 1/4 teaspoon salt
  4. 1 teaspoon baking powder
  5. 160g soft unsalted butter
  6. 160g caster sugar
  7. 3 eggs
  8. 1 teaspoon vanilla extract
  9. 2 tbsp milk
  10. 1/4 cup powdered sugar for dusting

Instructions

  1. SIEVE 1-1/4 CUP ALL PURPOSE FLOUR, 2 TBSP CORNFLOUR, 1/4 TSP SALT, 1 TSP BAKING POWDER, SET ASIDE
  2. BLEND 160 GMS EACH OF CASTOR SUGAR & UNSALTED BUTTER UNTIL CREAMY
  3. ADD 3 EGGS, ONE AT A TIME, BLEND UNTIL PALE & FROTHY
  4. ADD 1 TSP VANILLA EXTRACT, BLEND
  5. ADD 2 TBSP MILK, BLEND WELL
  6. GRADUALLY ADD THE DRY INGREDIENTS, CUT & FOLD UNTIL WELL COMBINED
  7. POUR BATTER INTO A GREASED & LINED CAKE TIN, LEVEL EVENLY
  8. BAKE IN A PREHEATED OVEN AT 180 DEGREES FOR 20-25 MINS UNTIL DONE
  9. DEMOULD, ALLOW TO COOL FOR 30 MINS
  10. CAREFULLY SLICE THE CAKE INTO 2 HALVES
  11. WHIP 1 CUP FRESH CREAM UNTIL IT FORMS SOFT PEAKS
  12. PLACE ONE HALF OF THE SLICED CAKE ON A SERVING PLATE, SPREAD 2 TBSP JAM ON TOP
  13. NOW SPREAD THE WHIPPED CREAM ON TOP
  14. PLACE THE SECOND HALF OF THE CAKE ON TOP
  15. DUST WITH POWDERED SUGAR
  16. SLICE & SERVE, TRY IT, IT'S YUM
