ABOUT Cheesy Herbed Khakhra RECIPE

Khakhra is a Gujarati traditional recipe and make in diffrent indian flavour,here i try this khakhra with italian masala and gives a new flavour to khakhra recipe.

Ingredients Serving: 8

  1. 1 cup whole wheat flour, extra for dusting
  2. 2 tbsp chick pea flour
  3. 3/4 cup cheese
  4. 1 tsp chilli flakes
  5. 1/2 tsp dried oregano
  6. 1/2 tsp dried basil
  7. 1/2 tsp black pepper
  8. 1/2 tsp mixed herb
  9. 2 tbsp olive oil
  10. 3/4 tsp salt or according to taste
  11. 1 and 1/2 tbsp butter
  12. 8 to 10 fresh basil leaves

Instructions

  1. PUT 3/4 CUP CHEESE IN A MIXER JAR, ADD 1 TSP RED CHILLI FLAKES
  2. ADD 1/2 TSP EACH OF DRIED OREGANO, BASIL & PEPPER POWDER
  3. ADD 1/2 TSP DRIED MIXED HERBS, BLEND
  4. GRIND TILL SMOOTH LIKE THIS, SET ASIDE
  5. TAKE 1 CUP WHOLE-WHEAT FLOUR, ADD 2 TBSP GRAM FLOUR
  6. ADD THE BLENDED HERBED CHEESE MIX, 2 TBSP OLIVE OIL
  7. ADD SOME WATER, MIX WELL
  8. ADD SALT TO TASTE, KNEAD INTO A DOUGH ADDING WATER AS REQUIRED
  9. REST THE DOUGH FOR 15-20 MINS
  10. NOW KNEAD THE DOUGH AGAIN FOR 2 MINS
  11. SHAPE IT INTO SMALL BALLS
  12. DUST WITH DRY FLOUR, ROLL INTO THIN ROTIS
  13. TRIM THE EXTRA EDGES TO MAKE NEAT ROUNDS OF THE SAME SIZE
  14. PLACE ON A TAVA, FLIP & GRILL ON LOW-MEDIUM HEAT ON BOTH SIDES
  15. WHEN BOTH SIDES ARE HALF DONE, PRESS & COOK UNTIL CRISP FROM BOTH SIDES
  16. TAKE OFF HEAT WHEN DONE
  17. GET ALL THE KHAKHRAS READY, ALLOW THEM TO COOL
  18. MELT 1.5 TBSP BUTTER, ADD A HANDFUL OF FRESH BASIL LEAVES, FRY UNTIL CRISP
  19. ALLOW THEM TO COOL, ADD SOME SALT, CRUSH LIGHTLY & MIX
  20. TRANSFER THIS BASIL-BUTTER & THE CRISP KHAKHRAS IN A PLASTIC BAG, SHAKE IT TO COAT EVENLY, SERVE
