1 cup whole wheat flour, extra for dusting
2 tbsp chick pea flour
3/4 cup cheese
1 tsp chilli flakes
1/2 tsp dried oregano
1/2 tsp dried basil
1/2 tsp black pepper
1/2 tsp mixed herb
2 tbsp olive oil
3/4 tsp salt or according to taste
1 and 1/2 tbsp butter
8 to 10 fresh basil leaves
Instructions
PUT 3/4 CUP CHEESE IN A MIXER JAR, ADD 1 TSP
RED CHILLI FLAKES
ADD 1/2 TSP EACH OF DRIED OREGANO, BASIL &
PEPPER POWDER
ADD 1/2 TSP DRIED MIXED HERBS, BLEND
GRIND TILL SMOOTH LIKE THIS, SET ASIDE
TAKE 1 CUP WHOLE-WHEAT FLOUR, ADD 2 TBSP
GRAM FLOUR
ADD THE BLENDED HERBED CHEESE MIX, 2 TBSP
OLIVE OIL
ADD SOME WATER, MIX WELL
ADD SALT TO TASTE, KNEAD INTO A DOUGH
ADDING WATER AS REQUIRED
REST THE DOUGH FOR 15-20 MINS
NOW KNEAD THE DOUGH AGAIN FOR 2 MINS
SHAPE IT INTO SMALL BALLS
DUST WITH DRY FLOUR, ROLL INTO THIN ROTIS
TRIM THE EXTRA EDGES TO MAKE NEAT ROUNDS
OF THE SAME SIZE
PLACE ON A TAVA, FLIP & GRILL ON LOW-MEDIUM
HEAT ON BOTH SIDES
WHEN BOTH SIDES ARE HALF DONE, PRESS &
COOK UNTIL CRISP FROM BOTH SIDES
TAKE OFF HEAT WHEN DONE
GET ALL THE KHAKHRAS READY, ALLOW THEM TO
COOL
MELT 1.5 TBSP BUTTER, ADD A HANDFUL OF FRESH
BASIL LEAVES, FRY UNTIL CRISP
ALLOW THEM TO COOL, ADD SOME SALT, CRUSH
LIGHTLY & MIX
TRANSFER THIS BASIL-BUTTER & THE CRISP
KHAKHRAS IN A PLASTIC BAG, SHAKE IT TO COAT
