Ingredients Serving: 10

  1. For the Dough :
  2. Corn flour 150 grams
  3. All purpose flour 150 grams
  4. instant dry yeast 1.5 teaspoons
  5. Brown sugar 3/4 teaspoon
  6. salt 1/2 teaspoon
  7. Softened butter unsalted at room temperature 3 tablespoons
  8. Large egg 1
  9. Lukewarm milk 100 ml
  10. Vegetable oil 30 ml
  11. For the saffron colour :
  12. Paprika Powder 2 tablespoons
  13. For the green colour :
  14. parsley leaves 1 cup
  15. Dill leaves 1/2 cup
  16. cilantros 1/4 cup
  17. water 1/4 cup
  18. Freshcream 2 tablespoon
  19. salt 1/4 teaspoon
  20. Garam masala 1/4 teaspoon
  21. butter 1 teaspoon
  22. Boiled mashed Channa dal 2 tablespoons
  23. Other Ingredients :
  24. egg large 1 for egg wash .
  25. White sesame seeds 1 tablespoon or as preferred

Instructions

  1. Take corn flour 150 grams , Maida 150 grams , salt 1/2 teaspoon in a bowl .
  2. Mix 1.5 teaspoon yeast , 3/4 teaspoon brown sugar in 100 ml lukewarm milk . Wait until frothy .
  3. Add 3 tablespoons soft unsalted butter ( room temperature ) to the flours.
  4. Add 1 large egg .
  5. Start kneading .
  6. Add the frothy yeast mixture . Add in remaining milk . ( total 100 ml )
  7. Add 30 ml vegetable oil . Knead to a super soft sticky dough .
  8. Knead the sticky dough for 15 minutes until dough turns smooth .
  9. Cover and rest the dough for 2 hours .
  10. Or until dough doubles in size . Keep in a warm place for better proofing .
  11. Blend 1 cup parsley, 1/2 cup dill leaves ,1/4 cup cilantros to a smooth paste . Heat tsp butter .
  12. Pour in purée , add salt , Garam Masala, fresh cream 2tbs , 2tbs mashed boiled Channa dal. Cook
  13. until thick sticky paste achieved . Cool . Our yeast dough has doubled in size .
  14. See how it looks . Divide the dough into 3 equal portions .
  15. Reserve one portion for white colour . Cover and keep .
  16. Take 2 tablespoons paprika powder in a plate . Coat one dough portion on paprika for saffron color.
  17. Then the third portion on the prepared spinach paste . Cover and rest all 3 doughs for 30 minutes .
  18. Then , shape each portion like vertical logs . Arrange as shown . Saffron , white and green.
  19. Bring 3 heads together . Start braiding in opposites securing the ends . Use 1 egg for egg wash .
  20. Cover and keep dough for 30 minutes . Dough has risen . Sprinkle sesame seeds .
  21. Place in a preheated cooker and bake in high for 25 minutes or until baked texture .
  22. Tricolour Corn Braided Bread is ready . Cool the bread . Slice and serve .
  23. Super spongy savory bread for evenings .
