ABOUT Low Calorie Medu Vadas ( No onion , no garlic ) RECIPE

Vadas needn’t be deep fried always . These healthy , low calorie vadas are prepared in appe pan with very little oil without compromising on the taste and sponginess of the vadas . No onion , no garlic version vadas are perfect for Navratri Vrath.

Ingredients Serving: 10

  1. White urad dal 1 cup
  2. Water for soaking 3 cups
  3. Water for grinding 1/4 cup or as required
  4. Salt 1 teaspoon
  5. Whole black pepper 1 teaspoon
  6. Curry leaves chopped 1 tablespoon
  7. Green chillies ( optional ) chopped as preferred
  8. Ginger finely chopped 1 teaspoon
  9. Sesame oil 3 tablespoons

Instructions

  1. Wash and soak 1 cup white urad dal in 3 cups water for 2.5 hours.
  2. After 2.5 hours , grind the drained dal to a slightly coarse paste by adding very little water .
  3. This is the texture of the Vada batter . Not too pasty nor too coarse .
  4. Transfer the batter to a bowl . Add a teaspoon salt .
  5. Add 1 teaspoon whole black pepper.
  6. Add a tablespoon finely chopped curry leaves .
  7. Add a teaspoon finely chopped ginger. Mix the batter well .Cover and refrigerate batter for 20mins.
  8. Refrigerating the batter ensures crunchy outside spongy inside textured vadas.
  9. Drizzle and heat sesame oil in a nonstick appe pan . . Fill the pits with Vada batter.
  10. Flip and Cook each sids in low to medium heat until golden light brown .
  11. Repeat and cook vadas in batches.
  12. Low Calorie Medu Vada is ready . This no onion no garlic version vadas are perfect for Navratri .
