Ridge gourd curry without onion and garlic is so tasty and good accompanied with hot rice.

Ingredients Serving: 5

  1. Ridge gourd 1/4 kg
  2. Jackfruit seeds peeled and pressure cooked 10 no.
  3. salt to taste
  4. water
  5. coconut gratings 1 cup
  6. Sambaru powder 2 tsp
  7. Curry leaves 1 string
  8. Dried mangoes 2 tsp
  9. For seasoning.. coconut oil 1 tsp
  10. Mustard seeds 1/2 tsp
  11. Red chilli 1

Instructions

  1. ADD COOKED JACKFRUIT SEEDS 10, SALT AND RIDGE GOURD SLICES INTO BOILING WATER, LET IT COOK WELL
  2. ADD COCONUT GRATINGS, DRIED MANGOES, PEPPER POWDER IN MIXIE JAR
  3. ADD IN SAMBARU POWDER AND SUFFICIENT WATER, CONTINUE GRINDING
  4. CHECK THE COOKNESS
  5. ADD GROUND MASALA AND SUFFICIENT WATER
  6. BRING IT TO BOIL FINELY, ADD CURRY LEAVES AND SEASONING, TAKE OFF FLAME AND SERVE WITH HOT RICE
