Ingredients Serving: 10

  1. Arbi 500 grams
  2. Buckwheat flour 3 -4 tablespoons
  3. Himalayan Pink Salt 1 teaspoon or as per taste
  4. Turmeric powder 1/4 teaspoon
  5. Kashmiri red chili powder 1 teaspoon or as preferred
  6. Ginger 1 inch piece finely chopped
  7. Carom/Ajwain seeds 1 teaspoon
  8. Cooking oil 7 tablespoons

Instructions

  1. Boil 500grams cleaned arbi in required water for 10 minutes or until arbi is 90% done.
  2. Cool the boiled arbi and peel off the skin .
  3. Arbi is ready to use . Transfer it to a bowl .
  4. Mash it roughly with fingers . Add 3 tablespoons buckwheat flour.
  5. Add required Himalayan pink salt .
  6. Add 1/4 teaspoon turmeric .
  7. Add 1 teaspoon carom seeds .
  8. Add 1 teaspoon or as preferred Kashmiri red chili powder.
  9. Add 1 inch ginger finely chopped .
  10. Mix all ingredients into a dough . Take small portion of the dough with greased palm , shape into
  11. Dough will be very sticky . Grease your fingers and palm with cooking oil .
  12. cylindrical rolls ( koftas ) and keep aside . Heat oil in grill pan . Drop the koftas one by one.
  13. in oil . Slow grill both sides until Koftas turn golden brown with a crunchy texture.
  14. Arbi Koftas are ready . Serve hot with any Falhari chutney / Dip .
