Vrat special rajgira atta paratha with sweet potatoes . Yummy and healthy.

Ingredients Serving: 2

  1. Rajgira atta 1 cup
  2. Sweet potato 1 medium
  3. ginger 1/2 inch
  4. Green chilli 2
  5. cumin powder roasted /1/2 tsp
  6. Rock salt as per taste
  7. water 1/3 - 1/2 cup
  8. Chopped coriander leaves 1 tsp
  9. Sesame oil or ghee as needed

Instructions

  1. IN A BIG AND DEEP BOWL ADD 1 CUP OF RAJGIRA FLOUR AND 1/2 CUP OF MASHED SWEET POTATO
  2. ADD 1 TSP GINGER/ GREEN CHILLI PASTE ,1/2 TSP ROASTED CUMIN POWDER AND 1TSP CHOPPED CORIANDER LEAVES
  3. ADD ROCK SALT AS PER TASTE
  4. ADD WATER GRADUALLY AND START KNEADING
  5. ADD 1 TSP SESAME OIL AND KNEAD AGAIN
  6. COVER THE DOUGH WITH A MOIST KITCHEN TOWEL AND KEEP ASIDE FOR 15 MINS
  7. DIVIDE THE DOUGH INTO 5-6 BALLS
  8. EQUAL SIZED BALLS ARE READY
  9. GREASE ROLLER BOARD WITH OIL A PUT A BUTTER PAPER ON IT . GREASE ROLLING PIN AS WELL
  10. LIGHTLY SPREAD SOME AMARENTH FLOUR AND ROLL THE PARATHAS , DO NOT ROLL THEM VERY THIN
  11. WHILE STACKING PARATHAS PUT SOME FLOUR OR GREASE WITH OIL
  12. THEY ARE READY TO FRY
  13. GREASE A NONSTICK TAWA WITH OIL OR GHEE
  14. FRY PARATHA
  15. WHEN BUBBLES APPEAR FLIP THEM TO OTHER SIDE APPLY GHEE OR OIL
  16. FLIP THEM MANY TIMES UNTIL CRISPY AND GOLDEN . PRESS ON THE EDGES TO COOK UNIFORMLY
  17. WHEN DONE REMOVE IN PLATE LINED WITH KITCHEN TISSUE
