Ingredients Serving: 6

  1. For Sweet Potato Canapés:
  2. Sweet potatoes - 250 g
  3. Singhara aata - 2 tbsp
  4. Butter - 1 tsp
  5. For Green Moong Sweet Sundal:
  6. Green moong - 1/2 cup, soaked overnight
  7. Jaggery - 1/3 cup
  8. Elaichi powder - 1 + 1/2 tsp
  9. Saunth powder - 1/2 tsp
  10. Grated nariyal - 2 tbsp + for garnishing

Instructions

  1. PRESSURE COOK SWEET POTATOES
  2. PEEL, CHOP INTO BIG CHUNKS
  3. GRATE FINELY
  4. ADD 2 TBSP SINGHARA AATA
  5. ADD 1 TSP ELAICHI POWDER
  6. ADD 1 TSP BUTTER
  7. COMBINE TO FORM SOFT DOUGH
  8. MOULD THE DOUGH OVER INVERTED, GREASED MUFFIN TIN
  9. BAKE AT 220°C FOR 20 MINS
  10. GENTLY UNMOULD THE CANAPIES, KEEP IT ASIDE
  11. PRESSURE COOK SOAKED GREEN MOONG IN SPROUTS STEAMER
  12. COOK TILL FIRM IN SHAPE BUT MASHABLE
  13. MELT JAGGERY, STRAIN TO REMOVE DIRT
  14. BOIL JAGGERY SYRUP, ADD 1/2 TSP SAUNTH POWDER
  15. ADD 1/2 TSP ELAICHI POWDER
  16. ADD COOKED GREEN MOONG
  17. MIX WELL, ADD 2 TBSP GRATED COCONUT
  18. SAUTÉ TILL THE DHAL ABSORBS JAGGERY SYRUP
  19. REMOVE FROM FLAME AT THIS CONSISTENCY
  20. PLACE 2 TBSP SWEET SUNDAL IN EACH CANAPÉ
  21. GARNISH WITH GRATED COCONUT
