Ingredients Serving: 3

  1. 270-280g boiled sweet potatoes
  2. 1 cup sugar
  3. 1/2 cup water
  4. 1/4 teaspoon cardamom powder
  5. 1/4 cup grated khoya
  6. 1/2 - 1 teaspoon Rose water
  7. Oil/ Ghee for frying

Instructions

  1. BOIL, PEEL & MASH 280 GMS SWEET POTATOES
  2. ADD 1/2 CUP GRATED KHOYA, MIX WELL TO FORM A SOFT, SMOOTH DOUGH
  3. GREASE PALMS WITH SOME OIL, MAKE SMALL BALLS OUT OF THE READY DOUGH, SET ASIDE
  4. DISSOLVE 1 CUP SUGAR IN 1/2 CUP WARM WATER, BOIL TO MAKE A SUGAR SYRUP OF 1/2 STRING CONSISTENCY
  5. ADD 1 TSP ROSE WATER, 1/4 TSP CARDAMOM POWDER, MIX & SET ASIDE
  6. DEEP FRY THE READY SWEET POTATO BALLS IN HOT OIL UNTIL GOLDEN BROWN & CRISP
  7. DRAIN ON TISSUE PAPER
  8. IMMEDIATELY ADD THEM TO WARM SUGAR SYRUP, SET ASIDE TO SOAK FOR 1 HOUR
  9. GARNISH WITH CHOPPED NUTS, SERVE CHILLED
