Ingredients Serving: 3

  1. For crust
  2. 110g buckwheat flour
  3. 40g cold ghee
  4. 2-5 tbsp ice cold water
  5. 2-3 tbsp powdered sugar
  6. For Halwa
  7. 1 cup grated Ash gourd
  8. 1/2 cup sugar - adjust
  9. 1 generous pinch saffron
  10. 1/4 cup water
  11. 2 tbsp + 1 teaspoon ghee
  12. 10-12 cashews
  13. 1/4 teaspoon cardamom powder

Instructions

  1. MIX BUCKWHEAT FLOUR AND SUGAR IN A BOWL
  2. ADD COLD GHEE AND MIX
  3. ADD LITTLE COLD WATER AND MIX UNTIL DOUGH COMES TOGETHER
  4. COVER DOUGH WITH CLING WRAP
  5. PAT DOUGH AND REFRIGERATE FOR 1 HOUR
  6. GREASE TARTLET MOLDS WITH GHEE AND DUST WITH FLOUR
  7. ROLL THE DOUGH
  8. CUT THE DOUGH IN BIGGER SIZE THAN TARTLET MOLDS
  9. PRESS AND SHAPE THE CUT DISCS INTO TARTLET MOLDS. FREEZE FOR 30 MINUTES
  10. PRICK THE DOUGH WITH FORK ALL OVER AND PLACE ON BAKING TRAY
  11. BAKE FOR 15-18 MINUTES UNTIL GOLDEN BROWN IN PREHEATED OVEN AT 180
  12. ALLOW THE BAKED CRUSTS TO COOL COMPLETELY
  13. FRY CASHEWS IN 1 TEASPOON GHEE UNTIL GOLDEN BROWN. KEEP IT ASIDE
  14. IN SAME PAN, ADD GRATED ASH GOURD AND SAUTE FOR 2-3 MINUTES
  15. ADD WATER AND MIX WELL
  16. COVER AND COOK STIRRING OCCASIONALLY UNTIL RAW TASTE DISAPPEARS
  17. ADD SUGAR AND MIX WELL
  18. ADD GENEROUS PINCH OF SAFFRON AND MIX WELL
  19. COOK UNTIL MIXTURE STARTS LEAVING SIDES OF THE PAN
  20. ADD 2 TBSP GHEE AND MIX WELL
  21. ADD CARDAMOM POWDER AND CASHEWS. MIX WELL AND SWITCH OFF
  22. ADD HALWA TO BAKED TARTLETS
  23. SERVE DELICIOUS TARTLETS
