ABOUT Samosas- Vrat Special RECIPE

Lipsmacking samosas made from Buckwheat and Rajgira flour specially for the fasting season

Ingredients Serving: 4

  1. 1/2 cup buckwheat flour
  2. 1/2 cup Amarnath flour
  3. Sendha namak to taste
  4. 2 TSP+ 1 teaspoon oil
  5. Water as required
  6. For Filling
  7. 1/4 cup ground Chironji
  8. 1 medium boiled potatoes, cubed
  9. Sendha namak to taste
  10. 3/4 teaspoon red chilli powder
  11. Pepper to taste
  12. 1/4 teaspoon cardamom powder
  13. 2 tbsp chopped coriander leaves
  14. 2 tbsp ghee
  15. 1 teaspoon cumin seeds
  16. Oil/ Ghee for deep frying

Instructions

  1. IN A BOWL, ADD BUCKWHEAT, AMARNATH FLOUR AND SENDHA NAMAK. MIX WELL
  2. ADD OIL , ADEQUATE WATER AND KNEAD INTO DOUGH
  3. COAT WITH 1 TEASPOON OIL. COVER AND KEEP IT ASIDE
  4. HEAT GHEE IN A PAN AND SPLUTTER CUMIN SEEDS
  5. ADD CHIRONJI AND POTATOES. MIX WELL
  6. SAUTE UNTIL CHIRONJI IS WELL FRIED
  7. ADD IN CARDAMOM, ROCK SALT, CHILI POWDER AND PEPPER. MIX WELL FOR A MINUTE
  8. ADD IN CORIANDER LEAVES AND MIX WELL. KEEP IT ASIDE
  9. ROLL THE DOUGH INTO SLIGHTLY THICKER CIRCLES AND CUT INTO HALVES
  10. APPLY WATER OVER THE EDGE
  11. TAKE 1 HALF.FOLD STRAIGHT EDGE AT CENTRE AND JOIN OVERLAPPING THE OTHER EDGE TO FORM CONE
  12. FILL CONE WITH FILLING. GENTLY SEAL EDGES COMPLETELY
  13. DEEP FRY OVER MEDIUM HEAT UNTIL GOLDEN BROWN
  14. FRY FEW GREEN CHILLIES AS ACCOMPANIMENT UNTIL IT LIGHTLY CHANGES COLOUR
  15. DRAIN EXCESS OIL OVER TISSUE PAPER
  16. SERVE HOT WITH CHILIES AND CHUTNEY
