Delicious vrat special barfi made from lauki/Bottle gourd

Ingredients Serving: 4

  1. 3.5 cups full fat milk
  2. 2 cups grated lauki
  3. 1 teaspoon cardamom powder
  4. Khoya 1.5 cups grated
  5. ghee for greasing
  6. sugar 1/2 cup - adjust
  7. 3 tbsp nuts
  8. 4 tbsp nuts to garnish
  9. Green food colouring - optional

Instructions

  1. BRING 3.5 CUPS MILK TO A BOIL, STIRRING OCCASIONALLY
  2. ADD 2 CUPS GRATED BOTTLEGOURD, MIX & COOK UNTIL IT STARTS THICKENING
  3. ADD 1/2 CUP SUGAR, MIX WELL
  4. ADD 1.5 CUPS GRATED KHOYA, MIX & SIMMER FOR 3-4 MINS
  5. ADD 1 TSP GREEN FOOD COLOUR ( OPTIONAL )
  6. ADD 3 TBSP CHOPPED MIXED NUTS, 1 TSP CARDAMOM POWDER, SIMMER FOR 5 MINS UNTIL THICK
  7. POUR THE MIXTURE INTO A GREASED & LINED DISH, LEVEL EVENLY
  8. GARNISH WITH NUTS, REFRIGERATE UNTIL SET
  9. SLICE THE BARFI INTO DESIRED SHAPES, STORE IN AN AIRTIGHT CONTAINER IN THE FRIDGE
  10. SERVE COLD, TRY IT, IT'S YUM
