ABOUT Motipak RECIPE

Motichoor ladoo is a well known desi sweet whereas Motipak is another traditional sweet , an alternative of motichoor Ladoos . Motipak is a burfi version of motichoor Ladoos which is known only to few traditional families . Let’s enjoy this age old traditional Motipak this Diwali .

Ingredients Serving: 10

  1. For the batter :
  2. Gram flour 1 cup
  3. Powdered sooji 3 tablespoons
  4. Ghee 2 tablespoons
  5. Orange food colour a pinch
  6. Water as required
  7. For frying boondis :
  8. Cooking oil as required for deep frying
  9. Ghee 1/4 cup
  10. For the sugar syrup :
  11. sugar 1 cup
  12. Water 2 cups
  13. Elaichi powder 1 teaspoon
  14. Lime juice optional
  15. Other :
  16. Extra ghee for greasing 1 tablespoon

Instructions

  1. Take 3 tablespoons powdered sooji, 1 cup sifted gram flour , 2 tablespoons ghee. Let’s begin.
  2. Take gram flour , powdered sooji in a bowl .
  3. Add 2 tablespoons ghee. Mix thoroughly .
  4. Add required water gradually and mix into a smooth pouring batter which is neither thin nor thick .
  5. Add a pinch of orange food colour to the batter. This is optional .
  6. Check the batter consistency . A drop of batter should float on the water surface .Batter is ready.
  7. Heat oil,1/4 cup ghee in a wide wok for deep frying. Keep small hole Boondi jhara over hot oil ,
  8. pour batter on jhara in quick circular motion.Flip and fry boondis until crunchy . Boondis ready.
  9. Let’s prepare sugar syrup with 1 cup sugar , 2 cups water . Keep stirring until sugar dissolves .
  10. Add a teaspoon elaichi powder at the time of syrup boiling .
  11. Boil until syrup turns dense and needn’t look for strong consistency .
  12. Simmer the flame to low . Add the boondis to the sugar syrup . Toss and slow cook for 10mins.
  13. The boondis look soft with sugar syrup absorbed . No sugar syrup left in the wok . Switch off .
  14. Grease a tray with a tablespoon ghee .
  15. Transfer the sweet boondi mixture to the tray. Spread , press . Level the surface .
  16. Sprinkle sliced almonds and pistachios . Allow to cook and set for 3 hours.Refrigerate for 30mins.
  17. Cut into squares . Traditional Motipak is ready .
  18. Enjoy .
