Ingredients Serving: 8

  1. 1 cup urad daal
  2. 4 cups rice
  3. 1tbsp coriander seeds
  4. 1 tbsp cumin seeds
  5. 2 cups roasted chana daal
  6. 2 tsp red chilli powder
  7. 1 tsp turmeric powder
  8. 2tbsp green chilli paste
  9. Salt as required
  10. 1 cup hot oil
  11. Water to knead the dough
  12. Oil for frying

Instructions

  1. LETS START WITH BAJNI FLOUR ...WASH AND DRY ROAST 1 CUP URAD DAAL TILL LIGHTGOLDEN BROWN
  2. WASH AND DRY ROAST 4 CUPS OF RICE
  3. ONCE THE DAAL IS BROWN IS BROWN. ADD 1 TBSP EACH CORIANDER SEEDS AND CUMIN SEEDS
  4. ROAST FOR 2 MIN
  5. ADD 2 CUPS OF ROASTED CHANA DAAL(DALIA)..GRIND IT INTO FINE POWDER.
  6. ADD 2 TBSP FRESHLY GRINDED GREEN CHILLI PASTE
  7. ADD 1 TSP TURMERIC POWDER,2 TSP RED CHILLI POWDER
  8. ADD 2 TSP SESAME SEEDS
  9. ADD 1 CUP HOT OIL TO THE MIXTURE
  10. FINALLY ADD SALT AND MIX WELL .FORM A CRUMBLE TEXTURE
  11. ADD WATER AND FORM A SOFT DOUGH
  12. TAKE A PORTION OF DOUGH AND PLACE IT IN GREASED MURUKUL MAKER
  13. USE STAR SHAPED NOZZLE TO MAKE CHAKLIS..FILL THE DOUGH FIRMLY
  14. MAKE ROUND CHAKLIS ON THE BASE OF FLAT BOWL OR ANY TRAY. I HAVE USED BOWL AS IT IS CONVENIENT..
  15. REPEAT SAME PROCESS OF MAKING CHAKLIS
  16. TAKE THE BOWL IN HAND..FLIP THE CHAKLI AND TRANSFER IT IN THE HOT OIL..
  17. LET IT FRY FOR SOME TIME..AND THEN FLIP IT TO FRY EVENLY
  18. REMOVE FROM THE FLAME ONCE DONE
