ABOUT RASMALAI ! RECIPE

Cottage cheese balls soaked in thickened,flavored and sweetened milk !

Ingredients Serving: 4

  1. Full cream cow’s milk- 1 liter
  2. Whey water or lemon juice
  3. Sugar 1/2 kg
  4. Saffron 4 pinch
  5. Sliced almonds,pistachio 4 Tbsps
  6. Arrowroot Powder 2 Tbsps
  7. Milk for Rabri 1 liter

Instructions

  1. RASMALAI ! BY RAMANI THIAGARAJAN !
  2. Take full cream cow’s milk and boil ! Add whey water !
  3. The milk will curdle !
  4. Curdled milk !
  5. Drain the curdled milk squeeze off the excess water !
  6. Take the chenna !
  7. Add saffron,little cardamom powder,sugar and arrowroot powder !
  8. In a cooker 8 cup water and 1 cup sugar !
  9. Mix and Boil !
  10. Knead till chenna turns out smooth and make balls !
  11. When syrup boils add prepared balls !
  12. Drop gently !
  13. Close the cooker ! After one whistle cook 8 minutes low heat !
  14. Make Rabri !
  15. Take each rasmalai and squeeze the syrup gently !
  16. Add in the prepared Rabri !
  17. Rabri and the rasmalai should be room temperature !
  18. Add saffron milk !
  19. Add chopped almonds !
  20. Add sliced pistachio and decorate !
  21. RASMALAI is Ready !
