Ingredients Serving: 6

  1. For Rice
  2. 1 kg Basmati rice soaked
  3. Shajeera 1 tsp
  4. Tej patta 2
  5. Big cardamom 2
  6. Salt to taste
  7. FOR SHEEK
  8. Chicken mince 1 kg
  9. Ggpaste 2 tbsp
  10. Onion paste of 1
  11. Green chillies 2 chopped
  12. Salt and pepper acc to taste
  13. OTHER INGRIDENTS
  14. Handful of mint and coriander leaves
  15. Cream 3tbsp
  16. FOR GRAVY
  17. 1 to 2 pc each cinnamon,cloves,cardamom,big cardamon
  18. Shajeera 1 tsp
  19. Onions 2 cups sliced
  20. Curd 400 grms
  21. Almonds 1 cup soaked
  22. Green chillies 4 to 5
  23. Salt &pepper to taste

Instructions

  1. ADD 1 TSP SHAHJEERA, 2 BAY LEAVES & 1 BIG CARDAMOM INTO WATER
  2. ADD 1 KG PRE SOAKED LONG GRAINED BASMATI RICE
  3. COOK THE RICE UNTIL HALF DONE, DRAIN & SET ASIDE
  4. FRY 2 CUPS SLICED ONIONS IN HOT OIL
  5. FRY UNTIL PINK LIKE THIS, TAKE OFF HEAT
  6. ALLOW THEM TO COOL A LITTLE, ADD TO A MIXER JAR
  7. ADD 400 GMS CURD, 1 CUP ALMONDS ( PRE SOAKED & DESKINNED ), BLEND
  8. MAKE A SMOOTH PASTE LIKE THIS, SET ASIDE
  9. ADD 1 EACH OF A CINNAMON, CLOVE, GREEN & BLACK CARDAMOM, 1 TSP SHAHJEERA
  10. ADD THE READY PASTE
  11. ADD 3-4 SLICED GREEN CHILLIES
  12. ADD SALT & PEPPER TO TASTE
  13. COOK UNTIL THE MASALA GRAVY TURNS THICK, TAKE OFF HEAT & SET ASIDE
  14. GRILL 1 KG CHICKEN SEEKH KEBABS, SET ASIDE
  15. SPREAD A LAYER OF THE READY RICE IN A COOKING POT, ADD 2 TBSP GHEE ON TOP
  16. SPREAD A LAYER OF THE MASALA GRAVY
  17. ARRANGE THE GRILLED SEEKH KEBABS OVER THIS
  18. SPREAD A LAYER OF A HANDFUL EACH OF CHOPPED MINT & CORIANDER LEAVES
  19. ADD THE REMAINING MASALA GRAVY
  20. ADD 3 TBSP FRESH CREAM
  21. LAYER WITH THE REMAINING RICE
  22. POUR 2 TBSP SAFFRON MILK ON TOP
  23. COVER & COOK ON DUM FOR 1 HOUR
  24. SERVE HOT WITH KACHUMBAR
