Ingredients Serving: 4

  1. 100 gram all purpose flour
  2. 1/2 tsp baking powder
  3. 2 egg
  4. 1 tsp vanilla essence
  5. 60 gram sugar
  6. 60 ml vegetable oil
  7. 1 and 1/2 tbsp condensed milk
  8. 1/2 cup confetti
  9. For filling, Gems, Marshmallow, some jelly candies

Instructions

  1. TAKE 100 GMS ALL PURPOSE FLOUR, ADD 1/2 TSP BAKING POWDER
  2. SIFT IT & SET ASIDE
  3. WHISK 2 EGGS, ADD 1 TSP VANILLA ESSENCE
  4. ADD 60 GMS SUGAR GRADUALLY
  5. ADD 60 ML REFINED VEGETABLE OIL, BLEND
  6. ADD 1.5 TBSP CONDENSED MILK, WHISK UNTIL THE MIXTURE TURNS LIGHT & FLUFFY
  7. ADD THE SIFTED FLOUR MIX GRADUALLY INTO THE EGG MIX
  8. MIX LIGHTLY USING THE CUT & FOLD METHOD TILL WELL-COMBINED
  9. FINALLY ADD 1/2 CUP CONFETTI & MIX
  10. TRANSFER THE READY BATTER IN A GREASED BAKING TIN
  11. TAP GENTLY TO LEVEL THE BATTER
  12. BAKE IN A PRE-HEATED OVEN AT 180 DEGREES FOR 25-30 MINS
  13. WHEN DONE, ALLOW IT COOL A LITTLE, DE-MOULD & PLACE ON A FLAT SURFACE
  14. SLICE INTO 4 NEAT, FLAT ROUNDS
  15. CUT INTO HALVES
  16. GET ALL THE SEMI-CIRCLES READY
  17. CUT FROM THE CENTRE LIKE THIS
  18. CUT 5 OTHER SEMI-CIRCLES IN THE SAME MANNER, LEAVING 2 OF THEM UNCUT, SET ASIDE
  19. WHISK 2 CUPS WHIPPING CREAM TILL SOFT PEAKS ARE FORMED
  20. DIVIDE THE WHIPPING CREAM INTO 5 EQUAL PARTS, TAKING THE 6TH PART IN A LITTLE EXTRA QUANTITY
  21. ADD DIFFERENT RAINBOW FOOD COLOURS, MIX
  22. TRANSFER THE COLOURED CREAM INTO SEPRATE PIPING BAGS
  23. PLACE AN UNCUT SEMI-CIRCLE AS THE BASE, SPREAD THE CREAM OVER IT
  24. NOW PLACE A CUT SEMI-CIRCLE PIECE OVER THIS, APPLY A DIFFRENT COLOURED CREAM
  25. LAYER ALL THE SEMI-CIRCLES IN THE SAME MANNER, SPREAD DIFFERENT COLOURED CREAM ON EACH
  26. FINALLY PLACE THE REMAINING UN-CUT SEMI- CIRCLE ON TOP
  27. NOW UPTURN THE CREAM BASE & SPREAD COLOURED CREAM LIKE THIS
  28. FILL THE HOLLOW IN THE CENTRE WITH GEMS, MARSHMALLOWS & JELLY CANDY
  29. NOW PLACE A CARDBOARD BASE OVER IT, FLIP IT CAREFULLY
  30. SEE HOW PRETTY THE LAYERS LOOK
  31. AGAIN SPREAD CREAM ON TOP
  32. SPREAD IT EVENLY
  33. DECORATE WITH COLOURED CREAM
  34. YOUR BEAUTIFUL RAINBOW CAKE IS READY
  35. CUT INTO HALF TO REVEAL THE SWEET SURPRISE FOR KIDS, SLICE & SERVE
