Attempted a fusion of italian pesto with indian chutney paired up with some crispy fried paneer!! :)

Ingredients Serving: 1

  1. paneer 3/4cup
  2. Red chilli 1/2
  3. oil 12tsp
  4. salt as needed
  5. Cheese of choice (parmesan, mozzarella) 1/4cup
  6. coriander tightly packed 1/2cup
  7. olive oil 1/4cup
  8. garlic 3
  9. Big Goose berry 1/2
  10. jeera 1/2tsp
  11. walnut 5
  12. chilli flakes (optional) one pinch
  13. Broken walnuts 1tsp

Instructions

  1. IN A MIXER ADD 1/2 GOOSE BERRY AND 1/4TSP JEERA
  2. PULSE IT FOR 30 SECONDS
  3. THEN ADD 3GARLIC AND 5 WHOLE WALNUTS
  4. GRIND IT TILL COARSE
  5. ADD 1/2CUP TIGHTLY PACKED CORIANDER AND 1/4 CUP OLIVE OIL
  6. GRIND IT TO A COARSE PASTE. DO NOT ADD WATER
  7. IN A BOWL ADD 1/4CUP CHEESE
  8. MIX THE PASTE TO IT AND SEASON WITH SALT
  9. IN A PAN OR KADAI ADD OIL
  10. ONCE HOT ADD 1/2REDCHILLI AND 3/4CUP CUBED PANEER
  11. FRY TILL GOLDEN ON ALL SIDES
  12. ONCE GOLDEN,SWITCH OFF STOVE
  13. THEN ADD PESTO AND MIX IT WELL
