Ingredients Serving: 4

  1. Mutton with bone 500 g pieces rinsed and cleaned
  2. Ladies fingers or Bhindi 450 g
  3. Onion sliced 2 medium size
  4. Asafortida1/4 teaspoon
  5. Bay leaf 1
  6. Dry spices powder: dry roast and grind a) 1 teaspoon cumin
  7. b) 1/2 teaspoon sauf
  8. c) 1/2 teaspoon fenugreek seeds or methi
  9. d) Mustard seeds 1/4 teaspoon
  10. e) Cardamom 4
  11. f) Cinnamon 1"
  12. g) Clove 4
  13. h) Dry red chilli 1
  14. i) Mace ( javitri) 1/2 petal
  15. Ginger paste 2 teaspoon
  16. Garlic paste 2 teaspoon
  17. Turmeric powder 1 teaspoonful
  18. Red chilli powder as per your preference
  19. sugar 1 teaspoon
  20. Salt as required
  21. Tomato sliced 1 big size
  22. Green cilli 5-6 or as you prefer
  23. Hot water 3- 4 cups
  24. Oil for cooking 2 tablespoon
  25. Garam Masala powder 3/4 teaspoon
  26. coriander chopped for garnishing

Instructions

  1. INGREDIENTS: MUTTON, TOMATOES, ONIONS, GREEN CILLI
  2. CLEAN MUTTON PIECES, WASH LADIES FINGERS OR BHINDI, ARRANGE SPICES
  3. GARLIC & GINGER PASTE, DRY SPICES
  4. ASAFORTIDA, TURMERIC POWDER, RED CHILLI POWDER, BAY LEAF
  5. SLIT LADIES FINGERS
  6. ROAST DRY SPICES
  7. GRIND
  8. KEEP ASIDE
  9. HEAT OIL
  10. FRY BHINDIS ( LADIES FINGER)
  11. REMOVE FROM OIL
  12. KEEP ASIDE
  13. ADD ASAFORTIDA OR HING TO HOT OIL
  14. ADD BAY LEAF
  15. ADD ONIONS
  16. FRY
  17. ADD SUGAR
  18. STIR AND MIX
  19. ADD MUTTON PIECES
  20. MIX
  21. ADD TURMERIC POWDER & RED CILLI POWDER
  22. MIX
  23. ADD GINGER & GARLIC PASTE
  24. ADD TOMATOES
  25. MIX WELL
  26. KEEP STIRRING
  27. ADD GREEN CILLI
  28. ADD SALT
  29. MIX WELL
  30. AFTER FEW MINUTES ADD HOT WATER
  31. COVER WITH A LID LET IT COOK FOR ABOUT 30- 40 MINUTES ON LOW FLAME
  32. REMOVE THE LID AND CHECK
  33. IF MUTTON COOKED WELL THEN ADD DRY SPICES POWDER
  34. THEN ADD FRIED BHINDIS
  35. MIX
  36. COVER AGAIN LET IT COOK FOR ANOTHER 10 MINUTES
  37. REMOVE THE LID AND ADD GARAM MASALA POWDER
  38. COVER AGAIN
  39. SWITCH OFF THE BURNER ANDLET IT STAND FOR FEW MINUTES
  40. GARNISH WITH CHOPPED CORIANDER AND SERVE HOT
