I have cooked this Taro Root (arbi) in mustard, cooking it in mustard make this Arbi masala very delicious.

Ingredients Serving: 4
Arbi(colocasia / taro root)-1 kg (peeled, washed and chopped )
garlic cloves(peeled)-5-6
Green chilli-2-3 sliced
Tomato(chopped)-1(large)
turmeric powder-1 tsp
Red chilli powder-1 tsp
cumin Seeds-1 tsp
coriander seeds-1 tbsp
Black pepper(whole)-1/3 tsp
Mustard seeds-1 tsp
salt to taste
lemon juice-1 tsp
Cooking oil-4 tbsp
Instructions
HEAT 4 TBSP OIL IN A PAN.
ADD ARBI CUT INTO ROUNDALS. FRY IT TILL GOLDEN AND TAKE OUT.
CUMIN SEEDS-1 TSP
CORIANDER SEEDS-1 TBSP
BLACK PEPPER-1/3 TSP MUSTARD SEEDS-1 TSP GARLIC CLOVES(PEELED)-5-6
GRIND ALL THESE INTO A FINM PASTE WITH LITTLE WATER
ADD GARLIC PASTE IN LEFTOVER OIL AND COOK .
ADD 1 TSP RED CHILLI POWDER, 1 TSP TURMERIC POWDER, SALT TO TASTE AND 1/2 TSP GARAM MASALA
MIX IT WELL
COVER IT AND COOK FOR 2-3 MINUTES, ADD 2-3 TBSP WATER, TO AVOID STICKING TO THE BOTTOM.
WHEN THE OIL SEPARATES ADD 1 CHOPPED TOMATO AND 2 GREEN CHILLI CUT INTO HALF.
COVER IT AND LET IT COOK FOR 2-3 MINUTES, TILL THE OIL SEPARATES.
WHEN THE OIL SEPARATES ADD 1 CUP OF WATER
WHEN WATER START BOILING ADD FRIED ARBI AND MIX WELL
COVER THE LID AND COOK FOR 5-6 MINUTES
SPRINKLE 1 SLICED ONION AND MIX WELL
COVER FOR 1 MORE MINUTE
CHECK, IF IT IS COOKED , OFF THE FLAME.
ADD 1 TSP LEMON JUICE AND MIX WELL
SPRINKLE 1 TSP FENUGREEK LEAVES
SERVE HOT WITH CHAPATI OR RICE
