ABOUT Jodhpuri Vegetable Pulao RECIPE

I first came across this dish in chef Sanjeev Kapoor's cookery book. Every time the pulao comes out perfect and tastes divine. Make this at your home and serve this delicious pulao for lunch or dinner if you wish to give a royal treat to your family.

Ingredients Serving: 4

  1. 3 tbsp ghee
  2. 1 tsp cumin seeds
  3. 12 cashews roughly chopped
  4. 12 almonds roughly chopped
  5. 1 TBSP garlic PASTE
  6. 1 tbsp ginger paste
  7. 12 raisins
  8. 1/2 cup curd
  9. 1/4 cup shelled peas
  10. 1/4 cup chopped carrots
  11. 1/2 tsp garam masala powder
  12. 2 cups Basmati rice
  13. 1 tsp crushed black pepper
  14. 3 cups water
  15. salt to taste

Instructions

  1. HEAT 2 TBSP GHEE IN A PRESSURE COOKER
  2. ADD 1 TSP CUMIN
  3. ADD 12 CASHEWS & 12 ALMONDS
  4. ADD 1 TBSP GINGER-GARLIC PASTE , SAUTE
  5. ADD 12 RAISINS & SALT TO TASTE
  6. ADD 1/4 CUP CARROTS AND PEAS, STIR
  7. ADD 1/2 CUP CURD
  8. ADD 2 CUPS SOAKED & DRAINED BASMATI RICE
  9. ADD 1/2 TSP GARAM MASALA & 3 CUPS WATER
  10. MIX WELL, PRESSURE COOK FOR 3 WHISTLES
  11. ONCE DONE, OPEN LID, ADD 1 TSP CRUSHED BLACK PEPPER & 1 TBSP GHEE
  12. MIX GENTLY
  13. SERVE HOT
