ABOUT Swiss Roll Omelette Curry RECIPE

As the name suggests, the omelettes are rolled like Swiss roll and cut into stripes , then cooked into coconut milk gravy. Serve it along with hot steamed rice. It is a very spicy and healthy egg curry

Ingredients Serving: 4

  1. For omelette :
  2. eggs 3
  3. chopped coriander leaves 1 tbsp
  4. salt 1/2 tsp
  5. oil 1 tbsp
  6. Black pepper powder 1/2tsp
  7. Chopped onion 1 medium size
  8. For Curry paste:
  9. coriander powder 2 tsp
  10. cumin seeds 1 tsp
  11. Fennel Seeds 1 tsp
  12. chilli powder 1 tsp
  13. turmeric powder 1/3 tsp
  14. Haram masala 1/2 tsp
  15. Grated coconut 2 tbsp
  16. FOR GRAVY:
  17. onion 1 medium size slices or chopped
  18. Green chilli 2 chopped
  19. salt as per taste
  20. tomato 1 large slices
  21. coconut Milk 2 tbsp
  22. water 1 cup
  23. oil as required

Instructions

  1. MIX 3 EGGS, CORIANDER, 1/2 TSP BLACK PEPPER & 1 CHOPPED ONION
  2. ADD GREEN CHILLIES, WHISK
  3. ADD SALT
  4. IN 1TBSP OIL, ADD EGG MIX
  5. WHEN IT TURNS BROWN FROM BELOW, FOLD CAREFULLY
  6. COOL, FOLD, CUT INTO STRIPS
  7. ADD 2 TSP CORIANDER, 1 TSP CUMIN, 1 TSP FENNEL, 1 TSP CHILLI, 1/3 TSP TURMERIC, 1/2 TSP GARAM MASALA, 2 TBSP GRATED COCONUT & 2 TBSP WATER TO A BLENDER
  8. BLEND TO A SMOOTH PASTE
  9. IN SOME HOT OIL, ADD 1 ONION
  10. WHEN ONION TURNS LIGHT BROWN, ADD GROUND CURRY PASTE
  11. ADD 1 TOMATO, 2 GREEN CHILLIES & SALT
  12. COVER & COOK FOR 4-5 MINS
  13. ADD 1 CUP WATER
  14. SIMMER FOR 5-7 MINS, ADD OMELETTE STRIPS
  15. COOK THE OMELETTES IN THE GRAVY FOR 3-5 MINS
  16. ADD 2 TBSP COCONUT MILK, AS GRAVY THICKENS , TAKE OFF HEAT
  17. SERVE HOT WITH STEAMED RICE
