ABOUT Vegetable Biryani RECIPE

Lip-smacking vegetable biryani in easy method. Anyone can make this biryani easily without much fuss. Accompany this biryani with raita to enjoy.

Ingredients Serving: 6

  1. Basmati rice 2 cups
  2. Salt 2 tsp +1. 5 tsp
  3. Curd 4 tbsp
  4. Red chilli powder 1 tsp
  5. Haldi 1 tsp
  6. Dry masalas- cardamom, cinnamon sticks, clove, black pepper, bay leaf
  7. Mix vegetables- cauliflower, peas, French beans, carrot, potatoes 2 cup
  8. Clarified butter (desi ghee) 1 tsp
  9. Onions 3 no.s
  10. Oil for frying

Instructions

  1. TAKE OIL IN A KADHAI AND FRY THE DRY MASALAS
  2. SIMULTANEOUSLY IN A DEEP BOTTOM PAN BOIL 5 CUPS OF WATER WITH DRY MASALAS. TAKE OUT FRIED DRY MASALAS
  3. WASH AND SOAK RICE FOR 20 MINUTES. CUT ONIONS INTO JULLIANS
  4. ADD 2 TSP SALT TO BOILING WATER. ADD 1 TSP DESI GHEE TO THE BOILING WATER
  5. GRIND THE FRIED DRY MASALAS AND KEEP ASIDE
  6. WHEN THE WATER STARTS BOILING ADD THE SOAKED BASMATI RICE
  7. FRY THE ONIONS IN OIL TILL GOLDEN AND CRISP.
  8. MEANWHILE, TAKE OUT THE 80% DONE RICE AND WASH WITH COLD WATER.
  9. IN THE REMAINING HOT OIL ADD MIXED VEGETABLES WITH CURD, SALT, CHILLI POWDER, GROUND MASALA. COOK THE VEGETABLES TILL 80% DONE
  10. NOW ARRANGE THE LAYERS OF THE BIRYANI IN A KADHAI. FIRST ADD 1TSP CURD AT THE BOTTOM TO PREVENT BURNING. NOW PUT ONE LAYER OF HALF VEGETABLES FOLLOWED BY HALF OF THE RICE AND HALF OF THE FRIED ONIONS AND AGAIN FOLLOW THE LAYERS AGAIN WITH THE REMAINING RICE AND VEGETABLES AND ONIONS.
  11. COVER THE KADHAI TIGHTLY, CAN ALSO SEAL THE KADHAI WITH ATTA DOUGH AND PUT ON VERY LOW FLAME FOR 20 MINUTES.
  12. GARNISH BIRYANI WITH FRIED KAJU. DELICIOUS LIP-SMACKING VEGETABLE BIRYANI IS READY TO BE SAVOURED.
