ABOUT Mexican Green Rice RECIPE

Ingredients Serving: 2

  1. BASAMATI RICE 2 cups
  2. Capsicum 2
  3. Garlic pods 6
  4. Onion 1
  5. Green chili 1
  6. Black pepper powder 1 tablespoon
  7. Chopped Coriander leaves 2 tablespoon
  8. Cumin 1 teaspoon
  9. salt as per taste
  10. Oil as required
  11. Water as required

Instructions

  1. APPLY OIL ON 2 CAPSICUMS, 1 ONION & 6 GARLIC CLOVES
  2. SPRINKLE 1 TBSP BLACK PEPPER
  3. GRILL IN A PREHEATED OVEN AT 220 DEGREES FOR 15 MINS
  4. COOL, PEEL OFF THE SKIN & CHOP
  5. GRIND TOGETHER WITH 1 GREEN CHILLI & A HANDFUL OF CORIANDER
  6. GREEN PASTE IS READY
  7. IN 2 TBSP HOT OIL, ADD 2 CUPS OF PRE SOAKED BASMATI RICE
  8. FRY FOR 1 MINUTE, ADD 4.5 CUPS OF WATER
  9. ADD SOME SALT, COVER & COOK
  10. WHEN RICE IS 3/4 TH COOKED, DRAIN AND KEEP ASIDE
  11. ADD 1 TSP CUMIN TO 1 TBSP HOT OIL
  12. ADD THE GREEN PASTE
  13. ADD SALT
  14. ADD COOKED RICE, MIX WELL
  15. SERVE HOT WITH PLAIN CURD
