  1. For stuffing
  2. aloo cooked and mashed 1 cup
  3. onion finely chopped 1 cup
  4. Finely grated ginger 1/2 tablespoon
  5. Hing or asafoetida 1 teaspoon
  6. turmeric powder 1 teaspoon
  7. Green chili 1
  8. Garam masala 1 teaspoon
  9. coriander powder 1 teaspoon
  10. jeera powder 1 teaspoon
  11. lemon juice 1/2 tablespoon
  12. Mustard seeds 1 teaspoon
  13. Curry leaves 5
  14. oil 1 tablespoon
  15. salt as per taste
  16. For bun dough
  17. Wheat flour 3/4 cup
  18. All purpose flour 3/4 cup
  19. Lukewarm milk 3/4 cup
  20. sugar 2 tablespoon
  21. Instant yeast 3/4 teaspoon
  22. salt - 1 teaspoon
  23. oil 2 tablespoon
  24. flour for dusting
  25. Milk for brushing
  26. oil for greasing
  27. butter for brushing

Instructions

  1. IN 1 TBSP HOT OIL, ADD 1 TSP MUSTARD SEEDS, 1 GREEN CHILLI & 5 CURRY LEAVES
  2. ADD 1 CUP CHOPPED ONION & SAUTE
  3. ADD 1/2 TBSP GRATED GINGER
  4. ADD 1 TSP TURMERIC POWDER
  5. ADD 1 TSP ASAFOETIDA, 1 TSP GARAM MASALA, 1 TSP CORIANDER & 1 TSP CUMIN
  6. ADD 1 CUP MASHED POTATOES AND MIX
  7. ADD SALT TO TASTE
  8. ADD 1/2 TBSP LEMON JUICE, MIX AND TAKE OFF HEAT
  9. IN 3/4 CUP LUKEWARM MILK, DISSOLVE 1 TBSP SUGAR
  10. ADD 3/4 TSP INSTANT YEAST, MIX AND KEEP FOR 15 MINS FOR BLOOMING
  11. MIX 3/4 CUP WHEAT FLOUR, 3/4 CUP FLOUR & 1 TSP SALT
  12. ADD 1 TBSP SUGAR
  13. ADD BLOOMED YEAST MIXTURE
  14. KNEAD INTO A DOUGH
  15. ADD 1 TBSP OIL
  16. KNEAD FOR 10 MINS BY STRETCH AND FOLD METHOD
  17. KEEP IN A GREASED BOWL AFTER BRUSHING OIL ON TOP FOR 15 MINS
  18. PUNCH AND KNEAD AFTER THE DOUGH DOUBLES UP
  19. CUT THE DOUGH INTO EQUAL PARTS
  20. ROLL OUT EACH DOUGH PART
  21. STUFF THE PREPARED ALOO MASALA IN THE DISC
  22. KEEP THE STUFFED DOUGH BALLS COVERED IN A GREASED BAKING TRAY FOR 15 MINS
  23. GIVE A MILK WASH
  24. SPRINKLE SESAME SEEDS
  25. BAKE IN A PREHEATED OVEN FOR 25 MINS
  26. APPLY BUTTER AFTER BAKING
  27. SERVE HOT
