it is a mexican recipe of red baby potatoes . instead of pamesan cheese i have used rice flakes for giving it an indian touch .

Ingredients Serving: 4

  1. 8- 10 red baby potato
  2. rice flakes / poha half cup
  3. salt as per taste
  4. cayenne pepper 1 tsp
  5. coriander powder 2tsp
  6. oil for cooking

Instructions

  1. WASH BABY POTATOES PROPERLY AND MAKE A CUT ON THE BABY POTATOES .
  2. IN A OPEN POT ADD WATER , THEN ADD SALT AND PUT RED BABY POTATOES FOR BOILING .
  3. CHEACK WITH FORK IF POTATOES BECOMES TENDER TURN OFF THE HEAT .
  4. IN A PAN TAKE RICE FLAKES AND DRY ROAST IT FOR ABOUT 5-7 MINUTES ON LOW FLAME .TURN OFF THE GAS AND LET IT COOL DOWN .
  5. IN A GRINDER GRIND ROASTED RICE FLAKES COARSLY . KEEP THIS ASIDE .
  6. IN A PAN TAKE 2 TSP OIL THEN ADD CORIANDER POWDER AND CAYENNE PEPPER .
  7. THEN ADD BOILED RED BABY POTATOES AND STIR IT FOR 2 MINUTES.
  8. THEN ADD SALT AS PER TASTE AND GRINDED RICE FLAKES POWDER . MIX IT WELL . COOK FOR ABOUT 2 MINUTES . TURN OFF THE GAS .
  9. CUT POTATOES INTO HALVES OR SERVE HOT AS IT IS . RICE FLAKES COATED MEXICAN RED BABY POTATOES ARE READY TO SERVE .
