Ingredients Serving: 7

  1. Potato boiled, pealed and mashed1/2 kg
  2. Capsicum finely chopped1
  3. Green chilly finely chopped 2
  4. Carrot grated 1
  5. Tomato finely chopped 1.
  6. Coriander leaves finely chopped 50 grams
  7. Onion finely chopped 2
  8. Cooking oil 1 table spoon
  9. Ginger finely chopped 1 inch
  10. Salt to taste 1 1/2 tea spoon
  11. For tempering__curry leaves 8-9
  12. Mustard seeds 1 tea spoon
  13. Turmeric powder 1/4 tea spoon
  14. Urad dal 1 tea spoon
  15. cumin seeds 1/2 tea spoon
  16. Asafoetida 1 pinch
  17. Red chilly broken pieces 2

Instructions

  1. BOIL THE POTATOES, PEAL IT AND MASH NICELY.
  2. HEAT OIL IN A KADAI. ADD MUSTARD SEEDS, URAD DAL, RED CHILLY PIECES, CUMIN SEEDS AND ASAFOETIDA.
  3. SAUTE TILL THE DAL TURNS GOLDEN. ADD CURRY LEAVES AND FINELY CHOPPED GINGER. CONTINUE TO SAUTE.
  4. ADD ONION SLICES AND SAUTE TILL TRANSLUCENT.
  5. ADD TURMERIC POWDER AND CAPSICUM PIECES, CONTINUE TO SAUTE TILL 2 MINUTES.
  6. NOW ADD GRATED CARROT AND TOMATO PIECES. STIR WELL 1 MINUTE.
  7. ADD SALT AND MASHED POTATOES.
  8. ADD 1 CUP OF WATER AND STIR WELL. CONTINUE TO COOK FOR FURTHER 3 MINUTES.
  9. NOW GARNISH WITH CORIANDER LEAVES. STIR ONCE, CLOSE THE LID AND KEEP ASIDE. PLACE THIS BHAJI WITH CHAPATHI, DOSA OR POORI.
