ABOUT Ukkarai RECIPE

Ukkarai is a special dish prepared on Diwali in Tamil nadu. It is basically a mix of channa dal and jaggery. Channa dal undergoes 4 process dry roast, soak, grind and steam cook before mixing with jaggery syrup.

Ingredients Serving: 3

  1. 1/2 Cup Channa dal
  2. 1/2 cup jaggery
  3. For seasoning ghee required
  4. cashew required
  5. Dried grapes required
  6. Fried Gram required
  7. cardamom powder

Instructions

  1. ADD 1/2 CUP CHANNA DAL. DRY ROAST DAL TILL YOU GET GOOD AROMA
  2. DONT BURN THE DAL
  3. SOAK ROASTED DAL IN WATER FOR 1 HOUR
  4. DRAIN WATER COMPLETELY
  5. GRIND DAL WITHOUT ADDING WATER
  6. MAKE SMALL PATTIES
  7. BOIL WATER TO STEAM COOK PATTIES
  8. CLOSE WITH A LID TO STEAM COOK PATTIES
  9. STEAM FOR 15 MINS ON LOW FLAME
  10. OPEN THE LID TO CHECK IF THE PATTIES ARE STEAM COOKED
  11. INSERT A FORK TO CHECK IF PATTIES ARE COOKED
  12. CRUMBLE THE PATTIES TO POWDER
  13. HEAT JAGGERY WITH LITTLE WATER
  14. STAIN IMPURITIES
  15. HEAT JAGGERY SYRUP FOR CANDY CONSISTENCY
  16. MIX CRUMBLED DAL AND JAGGERY
  17. SPREAD UKKARAI AND COOL THE MIXTURE
  18. ADD FRIED CASHEWS, DRIED GRAPES, CARDAMOM POWDER AND FRIED GRAM. MIX GENTLY
  19. UKKARAI IS READY TO SERVE
