Make a semi soft dough with the first five ingredients and keep to chill for around 15 minutes
Now Take the dough and cut into 4 parts
Press in mini tartlets removing the excess dough
Bake at 180 ° for 15 to 20 minutes
Remove demould and let keep aside
For the caramel take a vessel add the sugar and few teaspoons of water. Keep on medium flame to caramelize. Keep swirling the vessel once or twice in between. Avoid using a spoon.
As it caramalizes remove from fire, add fresh cream and mix
Keep on low flame and mix for few seconds
Now add butter and salt, mix and keep aside
Leave for few seconds and pour on the tartlets leaving space on top for the choco topping/ ganache
For the chocolate ganache take chocolate, butter and fresh cream. Microwave for a minute mixing in intervals and spoon on the tartlets.
Can chill and serve or have right away.
