ABOUT Gujrati Paatra RECIPE

These patras are made from colocassia leaves smeared with spicy gram flour paste.The patra rolls can be steamed and kept ready beforehand.When your guests arrive or you want to eat,you can temper or fry and serve hot with ketchup,green chutney or as it is.

Ingredients Serving: 5

  1. Colocasia leaves-25-30
  2. Gram flour/Besan-2 cups
  3. Tamarind plup-2 tablespoon
  4. Jaggery-1/2 cup
  5. Ginger chilli paste-1 tablespoon
  6. Turmeric-1/2 teaspoon
  7. Red chilli powder-1 teaspoon
  8. Coriander cumin powder-1 teaspon
  9. Garam masala-1/2 teaspoon
  10. For tempering:-
  11. Mustard seeds-2 teaspoon
  12. Sesame seeds-2 teaspoon
  13. Green chillies-2
  14. Curry leaves- 3 sprigs
  15. Oil-1 tablespoon
  16. Coriander for garnishing

Instructions

  1. Wash and dry all the leaves.Keep it upside down and slowly cut the thick part of the stem.Prepare all leaves similarly.
  2. Take besan in a bowl and add ginger garlic paste,tamarind pulp,jaggery,salt,tumeric powder,chilli powder,coriander powder and garam masala powder.
  3. Whisk and mix everything to form a smooth batter.
  4. Take one big leaf and apply besan paste all over.
  5. Now take another leaf and keep it opposite to the previous leaf.The top pointed part of first leaf and bottom broad part of second leaf should be one above the other.Apply besan paste again.
  6. Similarly place all leaves opposite to the previous one and keep applying the besan paste.
  7. You can keep 5 to 6 leaves one above the other
  8. Now fold little from both sides and seal by applying besan paste
  9. Roll tightly from top part to bottom
  10. Keep it in a plate
  11. Now prepare a steamer and keep all the rolls on the sieve
  12. After the rolls are cooked,let it cool and then cut each roll into half inch pieces
  13. Take oil for tempering
  14. Add mustard sees,curry leaves,sesame seeds and green chilli pieces
  15. Saute for 30 seconds
  16. Add all paatra pieces to it and mix lightly till it is well coated.
  17. Toss lightly till patraa is slightly brown and crispy.Alternately fry Patraa .Gujrati Paatra is ready to serve.
