Beautiful Champakali mathri or karela mathris ideal for any festival. In North India, also served as chaat by adding sweetend curd, imli chutney, chaat masala and other seasonings on top

Ingredients Serving: 6

  1. Maida 4 cups
  2. Oil for deep frying and little for kneading dough
  3. Crushed black pepper 1 teaspoon
  4. Crushed Jeera 1 teaspoon
  5. Ajwain 1 teaspoon
  6. Salt to taste
  7. Little water for kneading dough

Instructions

  1. Mix 4 cups flour, 2 tablespoon Oil, 1 teaspoon each of crushed Black pepper and cumin, 1 teaspoon Carom seeds and salt to taste
  2. Using very little water, Knead a tight dough and keep Aside for 20 minutes
  3. Knead the dough again for 2 minutes
  4. Roll out thin pooris of the Dough
  5. Make vertical cuts, leaving Out the ends
  6. Carefully fold and seal from The ends
  7. Heat deep fry in hot oil on low
  8. Take off heat when golden Brown and crisp, cool and store In an air tight container
