Ingredients Serving: 10

  1. 250 gm yellow moong dal
  2. One tbl spn rai
  3. Hing powder
  4. Roasted cummin powder
  5. Red chilli powder
  6. Oil for Deep frying
  7. One tea spn ginger crush
  8. Fresh coriander leave
  9. Green chilli

Instructions

  1. SOAK 250 GMS MOONG DAL FOR 3-4 HOURS
  2. SOAK 1 TBSP MUSTARD SEEDS FOR 10 MINS & STRAIN
  3. GRIND THE MUSTARD INTO A PASTE & MIX WITH LITRE WATER
  4. MIX TILL FROTHY & ADD 1 TBSP ROCK SALT
  5. HEAT A CHARCOAL PIECE ON OPEN FLAME FOR 2 MINS
  6. PUT IT IN A METAL BOWL & PLACE OVER THE MUSTARD- WATER SOLUTION
  7. PUT 1 TBSP GHEE ON THE CHARCOAL PIECE
  8. PUT 1/4 TSP ASAFOETIDA ON IT, COVER & SET ASIDE FOR 4-5 HOURS
  9. REMOVE THE CHARCOAL PIECE & ADD 1/2 TSP RED CHILLI TO THE MUSTARD WATER
  10. ADD 1/2 TSP ROASTED CORIANDER
  11. ADD 1 TSP ROASTED CUMIN
  12. ADD SALT TO TASTE AND A HANDFUL OF FRESH CORIANDER
  13. GRIND A 1 INCH PIECE OF GINGER, 3-4 GREEN CHILLIES & THE SOAKED & DRAINED MOONG DAL INTO A FINE PASTE
  14. ADD 1 TSP FENNEL, 1 TBSP ROASTED CORIANDER, SALT TO TASTE , A HANDFUL OF FRESH CORIANDER & 1 TSP GREEN CHILLIES TO THE GROUND DAL
  15. ADD 1/4 TSP BAKING SODA
  16. FRY SMALL BALLS OF THE GROUND DAL MIX
  17. TAKE OFF HEAT WHEN GOLDEN BROWN & CRISP, ADD TO THE MUSTARD WATER & SET ASIDE FOR 5-6 HOURS
  18. PUT KANJI-VADA IN SERVING BOWLS, SPRINKLE CHILLI POWDER TO TASTE
  19. SPRINKLE SOME ROASTED CUMIN, TOP WITH FRESH CORIANDER & SERVE
