ABOUT Refreshing Curd Rice RECIPE

Curd rice is also called yogurt rice. It is a part of breakfast, lunch or dinner. Kids like it a lot.

Ingredients Serving: 3

  1. 1 cup rice
  2. 1/2 ltr water
  3. 1/4 ltr milk
  4. 1 tea spoon salt
  5. 1/2 ltr fresh curd
  6. Onion chopped 1 cup
  7. Cucumber chopped 1 cup
  8. Coriander leaves chopped 1 cup
  9. Raisins and chopped dates 1 cup
  10. Fresh green grapes chopped 1 cup
  11. Pomegranate arils 1 cup
  12. Chopped green chilly 1
  13. Finely chopped fresh ginger 1 tea spoon
  14. For garnish fresh black grapes and red cherry
  15. For tempering.. 3 tea spoon ghee
  16. 1/2 tea spoon mustard seeds
  17. 1 tea spoon urdu
  18. 1/8 tea spoon asafoetida
  19. 1 red chilly
  20. 1 string curry leaves
  21. Handful of groundnut, cashwenut and badam

Instructions

  1. ADD 500 ML WATER, 250 ML MILK, 1 TSP SALT INTO 1 CUP RICE AND PRESSURE COOK UP TO 6-7 WHISTLES
  2. ADD 1/2 TSP MUSTARD SEEDS, 1 TSP URAD DAL, 1/4 TSP ASAFOETIDA AND 1 RED CHILLI INTO 3 TBSP HOT GHEE
  3. ADD 1/4 CUP ALMONDS- CASHEWS-PEANUTS AND A HANDFUL OF CURRY LEAVES, FRY & KEEP ASIDE
  4. ADD 500 ML CURD TO THE COOLED RICE
  5. ADD ALL THE SPECIFIED ITEMS, MIX
  6. SERVE CHILLED TOPPED WITH A FEW BLACK GRAPES AND CHERRIES
