ABOUT Baingan ke Pakore RECIPE

In this preparation Eggplant or Brinjal are sliced and coated with chick pea batter and then deep fried until it is crispy. It’s a perfect rainy day snack enjoyed with Muri or Puffed Rice. It is also goes well as a side dish with Rice and Dal or Khichuri.

Ingredients Serving: 8

  1. 4 Onion, Medium Size Finely Sliced
  2. Fresh garlic 50g
  3. Fresh ginger 25g
  4. tomato 200g
  5. potato 300g
  6. Bay leaves 3-4
  7. 1 Spoon cumin seeds
  8. cardamom 4-5
  9. cinnamon 1 small piece
  10. Whole Red Chilli 6-7 Piece

Instructions

  1. WASH, CUT EGGPLANT INTO THIN ROUNDS
  2. MIX 1/4 CUP CHICKPEA FLOUR, 1/4 CUP RICE FLOUR, 1/4 TSP TURMERIC, SALT TO TASTE AND 1/4 TSP RED CHILLI
  3. ADD 2 TBSP POPPY SEEDS, 1/4 TSP BAKING SODA AND WATER, MAKE A SMOOTH BATTER
  4. DIP EGGPLANT ROUNDS IN THE BATTER, DEEP FRY IN HOT OIL
  5. FRY TILL GOLDEN BROWN AND CRISP
  6. SPRINKLE 1/4 TSP BLACK SALT, SERVE HOT
