Matbucha is an Arebian spread .its smoky flavour is the main componenent of the spread ..which inhances its taste .it is tangy ,sweet and saur spread which goes every thing l8ke poori; paratha, nan ,bread sandwiches etc...basicaly its indian chutney with smoky flavour.

Ingredients Serving: 6

  1. 2 red bell paper
  2. 1 green bell paper
  3. 1 jelopeno chopped
  4. 5 tomato chopped
  5. 4 Dry red whole chilli soakedin water /or red chilli paste 1table spoon
  6. 5 garlic crushed
  7. Sugar 1table spoon
  8. salt as per taste
  9. 1 tea spoon Blackpaper
  10. 1 teaspoon chilli flakes
  11. 1 Teaspoon oregano
  12. 2table spoon olive oil

Instructions

  1. ROAST 1 RED & 1 GREEN BELL PEPPER TILL THEY GET CHARRED
  2. SCRAPE OFF THE BURNT SKIN FROM OUTSIDE, DE-SEED
  3. SAUTE 5 TOMATOES, THE BELL PEPPERS & 1 JALAPENO ON LOW HEAT
  4. ADD 5 CRUSHED GARLIC CLOVES & 1 TBSP SUGAR
  5. ADD THE PASTE OF 4 PRE- SOAKED DRY RED CHILLIES & WATER
  6. ADD 1 TSP EACH OF CHILLI FLAKES, OREGANO, PEPPER & SALT TO TASTE, COOK FOR 30 MINS ON LOW HEAT
  7. MIX 1 TSP RED CHILL POWDER & 2 TBSP OLIVE OIL
  8. ADD THIS TO THE TOMATOES, COOK FOR ANOTHER 15 MINS, COOL & STORE IN AN AIR TIGHT BOTTLE
