ABOUT Ivy Gourd Jeera Curry RECIPE

An authentic spicy jeera curry from the state of Andhra pradesh. Lots of cumin blend with garlic and seasame seeds makes it a perfect warm winter curry.

Ingredients Serving: 4

  1. Tendli /ivy gourd - 400 gms
  2. 2 tbsp oil
  3. For Masala: Cumin seeds - 2 tbsp
  4. Seasame seeds - 1/4 cup
  5. Dry Red chilies - 10
  6. Garlic pods - 2
  7. Water sufficient to make a paste
  8. For tempering :
  9. 1 tbsp Oil
  10. Mustard seeds - 1 tsp
  11. Garlic pod - 1

Instructions

  1. SAUTE THE IVY GOURD IN OIL UNTIL 90% COOKED
  2. REMOVE STIR FRIED IVY GOURD ON A PLATE
  3. GRIND THE MASALA WITH LITTLE WATER
  4. MAKE A SMOOTH PASTE AND KEEP IT ASIDE
  5. START WITH THE TEMPERING : HEAT OIL, SPLUTTER MUSTARD SEEDS
  6. ADD GARLIC AND SAUTE UNTIL AROMATIC
  7. ADD THE MASALA PASTE AND MIX WELL
  8. SAUTE FOR 7 TO 8 MINUTES
  9. ADD THE FRIED IVY GOURD AND MIX WELL
  10. ADD A GLASS OF WATER AND SALT FOR SEASONING
  11. MIX, COVER AND SIMMER FOR 10 MINUTES TILL DONE. SERVE HOT
