Ingredients Serving: 3

  1. Grated carrot -2 cups
  2. Full cream milk - 3-4 cups
  3. Sugar -1/2 cup
  4. Cardamom powder - 1 tsp
  5. Crushed Cashew nuts -1/4 cup
  6. Raisins -1 tbsp
  7. Clarified Butter (ghee) -2-3 tbsp
  8. 2 tsp Chopped pistachios for garnish

Instructions

  1. BOIL 2 CUPS GRATED CARROTS AND 3-4 CUPS MILK
  2. COOK FOR 30 MINS ON LOW HEAT
  3. ADD 1/2 CUP SUGAR, STIR WELL
  4. ADD 1/4 NUTS, 1 TBSP RAISINS AND MIX UNTIL MIXTURE STARTS THICKENING
  5. ADD 1 TSP CARDAMOM POWDER AND SWITCH OFF
  6. ADD 2-3 TBSP GHEE, MIX WELL
  7. GARNISH WITH CHOPPED PISTACHIOS, SERVE HOT
