ABOUT Coconut Milk Veg Biryani RECIPE

This coconut milk vegetable biryani is one pot aromatic rice cooked with coconut milk, vegetables and whole garam masala. This one pot vegetable biryani is best for kids lunch box which can be easily prepared within 30 minutes.

Ingredients Serving: 3

  1. 1 cup basmati rice
  2. 1 cup coconut milk
  3. 1/2 cup water
  4. 1 onion, thinly sliced
  5. 1 tomato, chopped
  6. 1 green chili, chopped
  7. 2 tsp ginger garlic paste
  8. 1 carrot, sliced
  9. 2 tbsp green peas
  10. 3 button mushrooms, sliced
  11. 1 potato, cubed
  12. 1/2 cup finely chopped coriander leaves and mint leaves
  13. 2 tbsp whisked thick curd
  14. 2 tsp biryani masala powder
  15. 1/4 tsp turmeric powder
  16. 1 bay leaf
  17. 1 star anise
  18. 3 cloves
  19. 2 cardamom
  20. 1 inch cinnamon
  21. 2 tbsp ghee
  22. salt to taste

Instructions

  1. SOAK THE RICE FOR 10 MINUTES, DRAIN EXCESS WATER. KEEP IT ASIDE
  2. HEAT GHEE IN A PRESSURE COOKER AND ADD ALL WHOLE SPICES
  3. ADD ONIONS AND STIR WELL
  4. SAUTE UNTIL ONIONS ARE TRANSLUCENT
  5. ADD GINGER GARLIC PASTE AND GREEN CHILI
  6. SAUTE UNTIL RAW AROMA DISAPPEARS
  7. ADD ALL VEGETABLES
  8. STIR THEM WELL FOR 1-2 MINUTES
  9. ADD TOMATOES
  10. ADD CORIANDER LEAVES AND MINT LEAVES
  11. ADD THICK CURD
  12. MIX WELL. COOK UNTIL TOMATOES ARE TENDER
  13. ADD BIRYANI MASALA POWDER
  14. STIR FOR 1-2 MINUTES UNTIL FRAGRANT
  15. NOW ADD IN COCONUT MILK AND 1/2 CUP WATER
  16. ADD TURMERIC POWDER
  17. ADD SALT AND MIX WELL
  18. ADD RICE
  19. STIR UNTIL EVERYTHING HAS BEEN WELL COMBINED.
  20. PRESSURE COOK FOR 2 WHISTLES ON MEDIUM HEAT
  21. OPEN THE COOKER AND GENTLY FLUFF THE RICE
