Ingredients Serving: 4

  1. Basmati rice 1 cup
  2. Onion 2, thinly sliced
  3. Capsicum 1, finely chopped
  4. Cabbage 3 tbsp,finely chopped
  5. Carrot 1,finely chopped
  6. Beans 10,finely chopped
  7. Peas 1/4 cup
  8. Potato 1,finely chopped
  9. Salt to taste
  10. For Grinding: Grated Coconut 1/4 cup
  11. Green chilies 2
  12. mint leaves 1/4 cup
  13. Coriander leaves 1/2 cup
  14. Poppy seeds 1 tsp
  15. Fennel Seeds 1 tsp
  16. Ginger 1 inch grated
  17. garlic cloves 3-4
  18. Cashews 4-5
  19. For seasoning: 3 tbsp oil
  20. Bay leaves 1
  21. Cardamon 3
  22. Cloves 3
  23. Fennel seeds 1/2 tsp
  24. Cashews 4-5
  25. Stone flower 1

Instructions

  1. CLEAN AND SOAK 1 CUP BASMATI RICE FOR 30 MINUTES. DRAIN EXCESS WATER
  2. HEAT OIL IN A PAN .ADD BAY LEAVES, CARDAMON, CLOVES, CASHEWS, FENNEL SEEDS AND STONE FLOWER. SAUTE FOR 1 MINUTE
  3. SAUTE SLICED ONIONS, SAUTE UNTIL TRANSLUCENT
  4. SAUTE VEGETABLES AND PEAS UNTIL TENDER
  5. MEANWHILE ADD COCONUT, FENNEL SEEDS, GREEN CHILIES, CASHEWS IN BLENDER
  6. ADD GINGER, GARLIC, CORIANDER,MINT AND POPPY SEEDS IN BLENDER. GRIND TO SMOOTH PASTE
  7. ADD SALT AND BASMATI RICE TO PAN. MIX WELL
  8. ADD GROUND PASTE AND MIX WELL
  9. ADD 2 CUPS WATER AND CLOSE PAN WITH A LID. COOK OVER LOW FLAME FOR 10 MINS UNTIL DONE. SERVE HOT WITH RAITA
