ABOUT Vathal Kulambu / Spicy Tamarind gravy ( No onion no garlic) RECIPE

It is a traditional tamilnadu recipe made in typical iyengar style. Vathal kulambu with roasted pappad is evergreen combination. This gravy has good shelf life and served with rice and Pappad.

Ingredients Serving: 3

  1. For Vathal Kulambu Powder
  2. Sesame oil 1 tsp
  3. coriander seeds 2 tbsp
  4. Channa dal 1 tbsp
  5. Methi 1/2 tsp
  6. Red chillies 6
  7. Hing
  8. For gravy
  9. Sun-dried Wonder berry / Manathakali Vathal handful
  10. Tamarind big lemon size
  11. Jaggery 1/2 tsp
  12. Turmeric powder 1/2 tsp
  13. Red chilli powder 1 tsp
  14. Salt 2 tsp
  15. Rice flour for thickness
  16. For seasoning Sesame oil 2 tbsp
  17. Mustard
  18. Channa dal 1 tsp
  19. Urad dal 1 tsp
  20. Hing
  21. Red Chillies 2
  22. curry leaves
  23. Methi 1/2 tsp
  24. Black pepper 1/2 tsp

Instructions

  1. SOAK TAMARIND IN LUKE WARM WATER
  2. TAKE REQUIRED SUNDRIED BERRY, SALT, JAGGERY, TURMERIC,RED CHILLI POWDER AND RICE FLOUR
  3. TAKE REQUIRED CHANNA, URAD, MUSTARD, HING, METHI, CURRY LEAVES AND RED CHILLIES FOR SEASONING
  4. TAKE REQUIRED CORIANDER SEEDS, CHANNA DAL, METHI, HING AND RED CHILLIES FOR POWDER
  5. ADD OIL.ADD REQUIRED THINGS FOR MAKING POWDER. ROAST THEM TILL YOU GET GOOD AROMA
  6. COOL THE MIXTURE
  7. GRIND THEM TO FINE POWDER
  8. HEAT SESAME OIL. ADD SEASONING
  9. ADD RED CHILLIES AND CURRY LEAVES
  10. ADD SUN DRIED WONDER BERRY. SAUTE
  11. ADD TAMARIND EXTRACT
  12. ADD JAGGERY, SALT, TURMERIC AND RED CHILLI POWDER
  13. ADD GROUNDED POWDER. BOIL FOR 10 MINS
  14. ADD RICE FLOUR PASTE FOR THICKENING GRAVY
  15. BOIL FOR 10 MINS TILL OIL SEPARATES FROM GRAVY
