ABOUT Mini Daal pakwaan chaat RECIPE

Daal pakwan is a famous dish of sindhi cuisine. I tried this first time in my kitchen on demand of my daughter. Here daal pakwaan is served as a chaat with green chatni, red chatni, sev, pomegranet, onion, green garlic and coriander leaves.

Ingredients Serving: 4

  1. For pakwaan :-
  2. maida 2 cup
  3. sooji 1 cup
  4. salt to taste
  5. Ajwain 1/4 tsp
  6. jeera 1/4 tsp
  7. oil 3-4 tbs
  8. water as needed
  9. oil for deepfry
  10. For daal :-
  11. chana daal 1 cup
  12. water 2-3 cup ( for soak )
  13. water 1 glass
  14. turmeric powder 1/4 tsp
  15. salt 1/2 tsp
  16. For tadka :-
  17. oil 2 tbs
  18. Dry red chilli 3
  19. hing 1/4 tsp
  20. Rai 1/4 tsp
  21. jeera 1/2 tsp
  22. turmeric powder 1/4 tsp
  23. Kashmiri red chilli powder 1 tsp
  24. Dhaniya jeera powder 2 tbs
  25. salt to taste
  26. Chopped onions 2
  27. Chopped green garlic 1/2 cup
  28. Crushed chilli and ginger 1 tsp
  29. Chopped coriander leaves 2 tbs
  30. For serving :-
  31. Red sweet chatni 1 bowl
  32. Green chatni 1 bowl
  33. pomegranate pearls 1 cup
  34. Chopped coriander leaves 2 tbs
  35. Chopped green garlic 1-2 tsp
  36. Chopped onion 2
  37. Namkeen sev 1 bowl
  38. Chaat masala as needed

Instructions

  1. TAKE A LARGE BOWL ADD 2 CUP MAIDA AND 1 CUP SOOJI,
  2. SALT AS YOUR TASTE , 1/4 TSP AJWAIN AND 1/4 TSP JEERA
  3. MIX WELL THEN ADD 3 TO 4 TBS OIL AND AGAIN MIX IT.
  4. YOU NEED ENOUGH OIL.
  5. NOW ADD WATER LITTLE BY LITTLE AND START KNEADING .
  6. MAKE A PURI DOUGH.
  7. NOW DOUGH IS READY.
  8. MAKE A SMALL BALLS FROM IT
  9. MAKE A CHAPATI FROM DOUGH BY HELP OF ROLLING PIN.
  10. ROLL IT IN BIG SHAPE.
  11. TAKE A SMALL BOWL OR ROUND CUTTER AND CUT THE ROTI FOR MINI PAKWAAN FOR CHAAT.
  12. PRICK IT WITH FORK AND MAKE ALL PAKWAAN SAME WAY.
  13. ADD ENOUGH OIL IN KADAI AND KEEP ON FLAME FOR DEEP FRY ALL PAKWAAN.
  14. FRY IT TILL IT TURN CRISPY OR LITTLE BROWINES.
  15. NOW MINI PAKWAAN FOR CHAAT IS READY
  16. ADD 1 CUP SOAKED CHANA DAAL IN COOKER.
  17. ADD 1/4 TSP TURMERIC POWDER , 1/2 TSP SALT AND 1 GLASS OF WATER.
  18. GIVE A 2 OR 3 WHISTLE ONLY.
  19. FOR TADKA ADD 2 TBS OIL IN KADAI FOR SIMMER.
  20. ADD 1/2 TSP JEERA 1/4 TSP RAI AND 3 DRY RED CHILLI.
  21. ADD 1/4 TSP HING AND 1/4 TSP TURMERIC POWDER
  22. ADD 2 CHOPPED ONION
  23. CURSHED 1 TSP CHILLI AND GINGER, 1 TSP KASHMIRI RED CHILLI POWDER, 2 TBS DHANIYA JEERA POWDER.
  24. SALT TO TASTE AND MIX IT.
  25. SAUTE FOR 5 MINUTES
  26. ADD 1/2 CUP CHOPPED GREEN GARLIC AND SAUTE FOR 3 - 4 MINUTE
  27. ADD BOILED CHANA DAAL AND MIX IT.
  28. COOK FOR 7-8 MINUTE ADD 2 TBS CHOPPED CORIANDER LEAVES NOW DAAL IS READY TO SERVE
  29. ALL INGREDIENTS ARE READY TO SERVE DAAL PAKWAAN CHAAT
  30. TAKE A PLATE KEEP MINI PAKWAN THEN ADD DAAL,
  31. GREEN CHATNI
  32. RED CHATNI ,ONION, POMEGRANATE PEARLS.
  33. NAMKEEN SEV
  34. CHOPPED GREEN GARLIC, CHOPPED CORIANDER LEAVES AND CHAAT MASALA
  35. NOW DAAL PAKWAAN CHAAT IS READY TO SERVE.
