ABOUT Rice Shyavige RECIPE

Rice shyavige is all time favorite dish in Mangalore and Udupi region. It's difficult to do. But kids like it to have more.

Ingredients Serving: 5

  1. Dosa rice (white rice) 2 cup
  2. salt 1 tsp
  3. water
  4. For coconut milk -
  5. Grated coconut 1 cup
  6. cardamom powder 1tsp
  7. jaggery powder 1 cup
  8. water
  9. For shyavige bhath -
  10. Chopped onion 1 cup
  11. Chopped lentils (beans) 1 cup
  12. Chopped carrots 1 cup
  13. Chopped coriander leaves 1 cup
  14. coriander powder 1 tsp
  15. pepper powder 1 tsp
  16. ginger paste 1 tsp
  17. salt 1/2 tsp
  18. For tempering -
  19. Urad dal 1/2 tsp
  20. Mustard seeds 1/2 tsp
  21. Broken red chilli 1

Instructions

  1. SOAK RICE 4 HRS, WASH AND GRIND SMOOTH BATTER.
  2. ADD OIL AND SALT TO A FRYING PAN.
  3. TRANSFER THE SMOOTH BATTER, ADD SUFFICIENT WATER, MIX WELL AND STIR CONTINUOUSLY IN MEDIUM FLAME.
  4. STIR TILL SPATULA STANDS STRAIGHT AND LET IT BE LITTLE COOL.
  5. BOIL LITTLE WATER IN STREAMER AND DO THE OVAL SHAPED BALLS FROM DOUGH.
  6. PLACE ALL THE BALLS AND STEAM COOK 25 MINUTES.
  7. IN THE MEANTIME DO THE FRESH COCONUT MILK.
  8. ADD JAGGERY AND CARDAMOM POWDER TO A BOWL, THEN SQUEEZE THE GROUND COCONUT.
  9. ADD SUFFICIENT AMOUNT OF WATER AND MIX WELL.
  10. PLACE THE HOT CYLINDRICAL DUMPLINGS ONE BY ONE IN TO A SHYAVIGE (CHAKLI) MAKER.
  11. PRESS THE THIN NOODLES (SHYAVIGE) ON A PLATE.
  12. FOR SHYAVIGE BHATH - DO TEMPERING.
  13. ADD CHOPPED ONION AND VEGETABLES, FRY WELL WITHOUT WATER.
  14. ADD GINGER PASTE, SALT, PEPPER POWDER, CORIANDER SEEDS POWDER AND CORIANDER LEAVES, SAUTE WELL.
  15. ADD FEW SHYAVIGE (NOODLES) AND MIX WELL.
  16. NOW READY TO SERVE SHYAVIGE WITH COCONUT MILK AND BHATH.
