It's a super yum sweet and sour bharta with innovation of my own, without using tomatoes, turmeric and coriander leaves and is well prepared using two types of sugar which gives a unique taste and is mouth watering, must try everyone

Ingredients Serving: 2

  1. 1 Big Brinjal approx 500gm
  2. salt to taste
  3. cumin seeds 1teaspoon full
  4. Red chillie 1/2 teaspoon
  5. coriander powder 1/2 teaspoon
  6. Curry patta few leaves to put inside and some for garnishing
  7. water 1/2 cup
  8. White sugar 1/4 teaspoon
  9. Brown sugar a pinch
  10. curd 1/2 katori
  11. onion 1 medium sized sliced well
  12. Green chillies 1-2 chopped
  13. ginger julliens thinly sliced 1 tablespoon
  14. garlic few cloves(5-6cloves) finely chopped
  15. Pure Desi ghee (don't use refined oil)
  16. turmeric 1/4 teaspoon (optional)

Instructions

  1. ALL THE INGREDIENTS ARE SHOWN HERE
  2. ADD PURE DESI GHEE,HEAT WELL
  3. ADD 1 MEDIUM ONION SLICED WELL, CHOPPED GARLIC 5-6CLOVES AND GREEN CHILLIES 1-2 CHOPPED WELL
  4. MIX WELL
  5. ADD GINGER JULLIENS THINLY SLICED
  6. ADD CUMIN, RED CHILLI AND SALT
  7. ADD CORIANDER POWDER AND WHOLE CURRY PATTA LEAVES (DO NOT CHOP THE LEAVES)
  8. MIX WELL
  9. ADD WHITE AND BROWN SUGAR AT THIS TIME
  10. MIX WELL AGAIN
  11. ON THE OTHER SIDE ROAST BAIGUN ON FIRE
  12. TAKE OUT THE BURNT SKIN OF BAIGUN
  13. WASH AND KEEP ASIDE
  14. MIX THE BAIGUN PULP IN THE PREPARED ONION MASALA MIXTURE
  15. ADD CURD TO IT
  16. MIX WELL
  17. ADD 1/2CUP OF WATER AT THIS TIME
  18. MIX WELL, DRY THE WATERY FLUID AND TAKE OUT IN A SERVING DISH
  19. SERVE GARNISHED WITH CHOPPED CURRY PATTA LEAVES
