ABOUT Instant Carrot Pickle RECIPE

This crunchy and spicy pickle is prepared with fresh carrots,chilies and flavored with aromatic Indian spices. So fresh and delicious!!

Ingredients Serving: 4

  1. Carrots - 5-6 (thin ones)
  2. Salt - 1 teaspoon (to taste)
  3. Coarsely ground mustard seeds - 1 teaspoon
  4. Mustard seeds - 1 teaspoon
  5. Deggi mirch powder - 1 tsp
  6. Turmeric Powder - 1/4 teaspoon
  7. Asafoetida (Hing) - 1/8 teaspoon
  8. Lemon juice - 1 tablespoon
  9. Mustard Oil - 1 tablespoon
  10. Fennel Seeds powder- 1/2 tsp

Instructions

  1. HEAT 1 TBSP MUSTARD OIL TO THE SMOKE POINT
  2. ADD PINCH OF ASAFOETIDA
  3. ADD MUSTARD SEEDS AND LET IT SPLUTTER
  4. ADD 1 TSP MUSTARD SEEDS POWDER, 1/4 TSP TURMERIC AND 1 TSP DEGGI MIRCH
  5. ADD 1/2 TSP FENNEL POWDER, 1 TSP SALT. SAUTE FOR FEW SECONDS
  6. ADD 5 THINLY SLICED CARROTS AND 2 GREEN CHILLI. OFF THE FLAME AND MIX WELL.
  7. WHEN IT COOLS DOWN, ADD 1 TBSP LEMON JUICE
